Unfortunately I’ve never been crazy about eggs.

A couple of times a year I’ll get a craving for them but I eat them only covered in good milk gravy and served with biscuits and hash browns.

Try making your Eggs Benedict sauce with curry powder. Melt about 2T butter in the microwave. Add about an equal amount of flour...combine with the butter and microwave about 30 seconds. Add 1C of milk and whisk thoroughly. Add salt, white pepper and about 1tsp of curry powder. Whisk again and microwave until thickened..whisk again and serve over poached eggs.

Everyday recipe: 2 minutes poached (crack into boiling water, then turn down heat). Spoon onto toast.

Home-made treat: Huevos rancheros. Refried beans, tortilla, salsa, poached eggs, hot sauce (totally freaks the kids out when they see me eating beans for breakfast)

Once-in-a-blue-moon real treat: Eggs benedict. With pork roll & hollandaise on an English muffin.

Low-carb "French toast"
2 eggs
1/2 tsp vanilla
1/4 tsp cinnamon
1 tsp oat fiber
Whisk all ingredients and pour into a greased, preheated pan. Cover and cook until set. Serve with low-carb maple syrup.

Mushroom and jack cheese and black olive omelet

Scrambled eggs with butter and pepper
