Here's an all-American hotdog idea: Kimchi buffalo hot dog

2 hot dog buns
2 buffalo hot dogs
1/4 cup finely diced kimchi mayo and mustard

Grill the hotdogs for a couple of minutes until they are heated through. Warm up the buns alongside the hotdogs. Smear a little may and mustard on the buns, insert the hotdog into the bun and top with diced kimchi.

Thank you. Looking for tips / tricks on pizza stone baking. I’m reading up on the internet - have enough to give it a go, regardless.

I lack what they call a baker’s peel to form the pizza on - but, I think I can use the back of a cookie sheet.

Also, I think I will make a couple of small pies rather than one big one - with tomato sauce (mine) and cheese only

We usually make home made corn tortillas to use with it. I also have a rice recipe that I will see if I can find....

Mexican Red Rice

1 cup uncooked rice — your choice
2 cups cold water
2 cloves garlic, minced or crushed
Olive oil
1/2 onion
Coarsely chopped small roma tomato, chopped into about 4 pieces
Hot pepper of your choice, sliced lengthwise
Tomato sauce (I’d say a little less that 1/4 cup)
1 tsp comino seeds (cumin) ground into powder
1 Tbs chicken bouillon
Salt, to taste

Put a little olive oil (Tbs or so) into a medium-sized pot and heat to a medium temperature, add the rice, uncooked, and brown in the oil. Make sure all the rice is lightly coated with the oil. You do not have to stir the rice around very much at first, while browning, but as the rice becomes browner you want to be stirring it around to make sure it all browns evenly and doesn’t burn. It will turn brown, but t’s not burning unless it’s turning dark/black. Towards the end of the browning, add the garlic so that it is sort of sauteed/browned.

Next, dump the water on the rice (it will steam up loudly) and add the remaining ingredients. Stir well and cover (with a small air escape). Reduce heat to medium-low to medium, and let cook for 20-30 minutes. (Cooking time and temperature varies with your stove. Check after 20 minutes to make sure you don’t burn.)

The essential rule of this recipe is “Do Not Peek” while the rice is cooking.

When it is ready, all the water will be absorbed, the rice will fluff, and each grain will be “split open” because of the browning. It should be dry, not saucy. You can adjust the spices/peppers to your taste. The recipe can be changed by keeping with the 1 cup rice/2 cups water ratio, and adjusting remaining ingredients.

Goes great with any manner of Mexican beans or as a side dish to Mexican entrees such as tacos, enchiladas, burritos, etc. Also great by itself.

National Ice Cream Month

When I read that out loud, my daughter hollered from the other room"Can I have some bunny tracks?" And we said yes, because

July 2 - National Anisette Day

is also her birthday.

In honor of that I'm doing the food for coffee hour at church tomorrow. No anisette in the coffee, but my menu is:

3 kinds of pinwheel/rollups - feta and cranberry, blue cheese and almond, and cream cheese and lox.

Black Bean Hummus

Spinach veggie dip (recipe from package of Knorr vegetable soup)

And of course, Birthday Cake

Actually, we did...RANCH was invented in Santa Barbara, CA. :)

And here's the original recipe!

Ranch Dressing

Mash 1 to cloves garlic and several pinches of salt until a paste is formed.

Whip 1 cup buttermilk along with 2-3 tablespoons lime juice.

Add garlic paste

Add:
1 tablespoon fresh chives, salt and pepper to taste.
If you want the dressing less runny add 1/2 to 1/3 cup mayo or yogurt.

Note:

Ranch dressing was created at the Hidden Valley Ranch Guest House in Santa Barbara in the 1950's

ROFL!!!!!

We just got home from a BBQ at a friend of hers. Today was also her friend’s mother’s B’day. We had an absolute blast, even though hubby and I were the oldest people in the group. Lots of discussion about the pros and cons of various firearms - and not just among the guys.

And AWESOME fireworks!

I have a friend that is diabetic and he will sample a couple but that’s his limit. The bad thing is, it’s hard to eat just one or two. :-)

Which reminds me. A week or so back, my husband saw an older woman out walking her dog, and she was wearing a superman costume. He said he did a double take as he couldn’t believe what he was seeing!
