Space may be the final frontier, but Star Trek is a well-explored universe by now. Captain Kirk, the Enterprise, transporters, phasers, tricorders and Klingons are part of our common language. But there's still tons of insane stuff you've never heard about Trek.

Worf mentioned it when they went back in time to Kirk’s Enterprise. He said it was a story best left for another time.

“Enterprise” actually plausibly explained that. The Klingons originally had the forehead plates. They attempted to create a caste of warriors combining human and other DNA with Klingon using a virus that got loose.

Don't you guys remember the classic scene from DS9?

I did not realize that The Enterprise featured a 6-lane bowling alley. Now that is hard to wrap my head around, Dr. Spock or the Captain renting those goofy bowling shoes and bowling three strings as they visited distant galaxies, going where no man has gone before.

I happened to go bowling on Friday for the first time in years and am I sore! My back, my arms, the upper parts of my legs are still sore even today. I also got very poor scores in two of my three strings but for the second game, I triumphantly bowled a 155.

FWIW. From the ST Deep Space 9 episode: "Trials and Tribble-ations", referencing TOS episode, "The Trouble with Tribbles":

Bashir: "Those are Klingons?"
Waitress: "All right. You boys have had enough."
Odo: "Mister Worf?"
Worf: "They are Klingons, and it is a long story."
O'Brien: "What happened? Some kind genetic engineering?"
Bashir: "A viral mutation?"
Worf: "We do not discuss it with outsiders."

it was touched on above and I do not remember the exact episode of Enterprise...

I do remember that it has something to do with the augments created by Dr. Singh and the Klingons attempting to create their own super-Klingons based on his work.

I remember the original episodes very well and posted the titles from TOS and DS9. I don’t think “Enterprise” touched on the storyline, however. The link I provided gives some additional insight/pov on the issue. Again, fwiw.

When he was directing himself and had to watch the footage afterwards — for example in Star Trek V — he found it really uncomfortable.

It was uncomfortable for everyone who watched it.

My understanding is Bill Shatner took one look at the scene and said, ‘No you will not! If anyone's going to be part of the first interracial kiss in television history, it's going to be me!' So they rewrote it.

Most men would be looking for an excuse to kiss Nichelle Nichols.

There was an episode in on Deep Space Nine with Worf in it where they go back in time and they use footage from the trouble with tribbles with the non bumpy headed Klingons. There is a scene in the cafeteria and one of Worfs mates who also did the time travel thing asks him about the difference and Worf just looks ready to give up and says don’t ask. If I recall the explanation given when the bumpy headed Klingons showed up in the first Star Trek movie was the old Klingons were from the southern part of the home planet and the bumpy ones from the northern part.
