That sounds like a great dish to bring to a pot luck supper!!!

Thanks, I just sort of thought that one up, but there are variations. Use green enchilada sauce and chicken with a can of cream of mushroom soup to make a "Chicken Enchilada Pasta," or you can add taco seasoned ground beef if you prefer beef enchiladas.
I'm a cheese enchilada freak, so that what I came up with.
