I finally figured out how to make sweet potatoes that aren’t so icky sweet. Nobody here likes the marshmallow stuff but this turned out perfect so this is going in the tradition file.
Take a big can (40 oz) of sweet potatoes and mash them up. Sprinkle on pumpkin pie spice, about a tablespoon of honey and tons of butter.
I made the oreo turkeys and marshmallow pilgrim hats and they were a hit! Everyone had to take pictures of the turkeys. No one wants to eat the last one, lol.
Have the carcass boiled so it’s turkey soup day.
Definitely a keeper!
I made the Waffles/Pancakes * 43 * Corn Fritters from last weeks thread, for our T-Day feast, and my wife just raved about them - I liked them as well! I did have to alter the recipe and added a little half and half to get the consistency right. Used the frozen tube type of creamed corn instead of canned.
Wow! You boiled up the last oreo turkey!? LOL

Oooh! National Fritters Day! I’ve got a recipe for that one!
I’m ready for your fritter recipe. I like any kind of fritters, so please post.
Two versions given - the original recipe from a TV show our friends saw, the other was our modified version for a LOT of fish fritters that turned out great.
Original version from TV show:
1/4 c - 1/2 c Franks Cajun or fish batter (such as Shoreline)
1/4 tsp garlic powder
1/4 tsp ginger
1/2 tap baking powder
1 to 2 eggs
1/4 c - 1/2 c beer
2 tbs gr onion
2 tbs gr pepper
Cut fish into small chunks (roughly 1”x1”). Mix all the ingredients, add fish and let permeate. Deep fry spoonfuls in shallow pan, turning over when crispy brown. Dip in jerk mayo.
Our weekend fish fry version that fed a lot of us for two nights:
Lots of fish fillets, cut into small pieces like above
3 boxes of Shoreline: 2 Original, 1 Cajun
1 whole green pepper, 1 whole onion, diced/minced into SMALL bits (relish-style)
1 tsp each garlic powder, ginger
Can of beer
Flour to get the right gooey but not runny texture.
This can all be made ahead of time and left in the fridge with one more ingredient. That way you can enjoy your company and adult beverages before everyone is hungry. The last ingredient to add before deep frying:
1 tbs baking powder
This batter is very spicy, it mellows some when deep fried.
Deep fry spoonfuls in shallow pan, turning over when crispy brown.
Dip into tartar sauce, although it was great without anything else added to it.
Thanks. Fish fritters is new to me, but it sounds good. We have fish on hand and were just leaving for the grocery store. Will get fish fry batter mix and try.
If you have any gravy still kicking around - throw a tablespoon or so into the soup too - rich & yummy!

viva la French...
Now give me a recipe for 25 pounds of leftover turkey?? LOL
My biggest dessert hit wasn’t a pie. It was:
Black Bottom Cupcakes
1 (8 ounce) package cream cheese, softened
1/3 cup white sugar
1/8 teaspoon salt
1 cup miniature semisweet chocolate chips
1 1/2 cups all-purpose flour
1 cup white sugar
1/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup water
1/3 cup vegetable oil
1 tablespoon cider vinegar
1 teaspoon vanilla extract
Preheat oven to 350 degrees F (175 degrees C). Line muffin tins with paper cups or lightly spray with non-stick cooking spray.
In a medium bowl, beat the cream cheese, egg, 1/3 cup sugar and 1/8 teaspoon salt until light and fluffy. Stir in the chocolate chips and set aside.
In a large bowl, mix together the flour, 1 cup sugar, cocoa, baking soda and 1/2 teaspoon salt. Make a well in the center and add the water, oil, vinegar and vanilla. Stir together until well blended. Fill muffin tins 1/3 full with the batter and top with a dollop of the cream cheese mixture.
Bake in preheated oven for 25 to 30 minutes.
Some assembly required.
We don’t use marshmallow. We sometimes add some sliced granny smith apples though to cut the sweetness.
