I think there is a big issue with gutting and butchering an animal, road kill or otherwise, for their own consumption or not, in a kitchen were other food is being prepared and served to the public, i.e. cross contamination.

I don't disagree with you. I was primarily pointing out that roadkill is fit for human consumption as long as it is fresh and the animal wasn't busted up.

True enough, and I’m not disagreeing with you either. But as for me, unless I killed the road kill critter with my own vehicle, or saw it getting hit and could get it field dressed and butchered fairly quickly or knew and trusted the person who did, I’m not going to eat it and I’m not sure I would even would then – to many unknowns with picking up road kill vs. hunting an animal – most hunters BTW get to observe a deer for a while before shooting it, but if a deer jumps in front of your car at highway speed, aside from it’s very likely going to be busted up, you also don’t know if it was acting funny, scitsy , i.e. sick before it jumped in front of some vehicle, even your own.

What is disturbing is that they drug the carcass that was stuffed into a trash can through the dining room leaving a trail of blood behind as they dragged it – that sounds pretty smashed up to me. You hit a deer at highway speed, there is likely to be internal organ damage, i.e. guts, bowls leaking into the abdominal cavity. (bleck). If it were a survival situation, I was on the verge of starvation, I might be willing to take some chances but otherwise, you can keep the road kill. : )

If they brought this through the front door and across the dining room, it kinda makes you wonder what they bring in through the back door.
