How so? He had a knife, was acting very agitated, and was coming at them. If they hadn’t shot he could have easily stabbed the cop on the left.
Then you don’t know squat about what a skilled person can do with a knife in close quarters.

Sorry, but if I am with my buddy who also carry's and this guy is taking a high ground offensive on him, I'm gonna make sure the knife wielder is down. Another couple paces and the guy could "superman" with that knife.

Shoot until the threat stops is SOP. The only questionable thing I saw on the video was the last two shots when the guy was already down on the ground. Unfortunately, the video resolution and size is not such where you can tell whether he still looked like he was going for another weapon or not.
That said - I really don’t think the last two mattered much at the point they were fired, not with all the other rounds that had already been pumped into him.
I wasn’t there and I’m not LEO. So disclaimers said, the police knew in advance they had a crazy with a knife. There were two LEO, one could have drawn a Taser and one a Glock, the Taser goes first and if that is not effective, the Glock ends the attack.
If there were one LEO then approach with gun drawn and shoot, but there were two.
With both of them with guns drawn they had no choice, and they had to shoot to stop the knife attack, they had a second to respond.

Really? You’re saying that if I were to wave a knife around in your face, screaming and threatening you, you wouldn’t be inclined to consider your life in danger?
Oh well, takes all kinds. Personally, someone waving a knife in front of me, screaming “SHOOT ME NOW M***** F****! SHOOT ME!”, while ignoring drawn guns and demands to drop the knife, I’m gonna go out on a limb and say he’s a crazy SOB with a knife and a credible threat.
Out of curiosity, have you ever had any self defense or emergency medical training? Are you familiar with a concept called the “21 foot rule”? Ever trained on how to treat an open pneumothorax?
Someone who’s never run or seen a Tueller Drill may have some misconceptions about where and when a person with a knife becomes a threat. Someone who isn’t familiar with the physical realities of knife wounds probably doesn’t have a clear concept of what “lethal” or “dangerous” is either.
Granted, there are interesting discussions to be had about use of force continuum and proper escalation for a range of situations... but really, at the end of the day when a screaming guy with a knife is in your face, you’ve got to decide how much you want to keep said face attached.
