Have a grinder done that. I’ve explored this seriously, bob. I spent time in Colombia, toured coffee farms, toured roaster companies, tasted their coffee while there and it’s the best I’ve ever tasted. Toured a coffee farm in Costa Rica as well. Bought beans from Starbucks special limited edition CALDAS beans from the region of Colombia that I lived in. It’s the closest I’ve found. Still have some in my freezer now. They don’t have them anymore.
I did some research on the grinding, and acquired a grinder or two.
Even so, it all tastes about the same to me. I only drink it for the caffeine, and when I buy it out, I tell the clerks that's what I want in it. Not sugar, not creamer, just caffeine.
I think you’re right about the water but I’m just not sure what sort the restaurants use since they have DC and Arlington county water, not some pure mountain stream!
If the restaurant is noted for their coffee, they may have installed a reverse-osmosis purification system, just for the coffee making. It would be worth it.
You could ask them. It’s not like a trade secret. If they’re doing that, they should be willing to tell you about it.
Otherwise, if they’re using soda water or something, then it may be a trade secret!

I make coffee with bottled water, like Ozarka, etc-even the 5-6 family water well/system out here has a purifier on the well, just like the one at the other house did, and I don’t have a reverse osmosis unit here to get rid of any taste-just a Brita pitcher...
Ditto. Iced tea is my first choice.
