Weekly Cooking: Special Thanksgiving Edition

While the food is always the real ‘centerpiece’ of the Thanksgving table, décor can make any occasion more special and memorable. A recent newsletter recently led me to a really beautiful website, ‘Freutcake’, which had this unique idea for place ‘cards’ or holders at the table.

The mini dried Indian Corn is available from dried botanical suppliers, and perhaps in your grocery florist area or local garden store; but you can also find them in pet stores, where they are sold in bags as a treat/enrichment for small pets. (And if you’re not into gilding things, they would be charming just left natural):

With all the things that have to be done at the last minute for Thanksgiving dinner, it’s nice whenever you can do something ahead. Taste of Home has a do-ahead Turkey Gravy recipe, which is useful even if you make gravy from your drippings but are having a crowd and need more:

Anyone want to try inventing a Fat Ball recipe for those on the keto diet? While everyone else is having pumpkin pie, the low-carb crowd can have these. Good gift too: leave them in the mini muffin tin and refreeze them when you get to the party.

The basic recipe is in The Keto Reset Diet. You could do a batch with pumpkin spice. Or a form of the fudge type that is cut into squares. Even a stuffing-flavored one to have with the turkey.

I was thinking of doing that this year in NYC. We could go back to our old hangout Kennedy’s, where Ann Coulter once showed up at our holiday party. Maybe we could get some of our favorite celebs to come. Anyone interested? Lost the NYC area ping list but maybe someone has it. DC folks expressed interest in coming up for Thanksgiving at one point also.

Start out by posting on your state page. Then people can add others. It grows like a chain reaction, like when you are planning a reunion.

I did a reunion for my entire high school in 2006. No one thought it could be done. It started out with a small list but eventually grew like Topsy and we were sold out.

We’re thinking about doing a small turkey in our electric smoker this time.

May I just grouse briefly that it’s SO not cool that Thanksgiving is WAY early this year? It completely snuck up on me. Completely my fault. Between the new job and starting grad school, I’ve been more than a little busy, but still... Thanksgiving is my favorite holiday. I’m going to take a couple days and just enjoy it and be so thankful to God for who He is and all He has done for me. Now, bring on the recipes!!

It IS early - my birthday is usually so close to Thanksgiving that we always celebrate it then. This year they’re in different weeks..

It will be brined overnight and smoked on a Traeger wood pellet grill using hickory pellets. Total cook time will be around 7 hours.

Are you going to use a temperature probe. If not get one and stick it in the thickest part of the breast. When it hits 165 degrees the turkey is done.

And we’d all serve heavy time in the hoosegow. But I’ve got an answer for that. When the vice cops break in to arrest us for associating with conservatives, we just say it’s a meeting of secret gay transgenders wishing to transition back to cisgender. See? No problem.

I went to a few of those parties. They were so much fun! One year I met Doctor Raoul and Kristinn. Great people. And I remember the time Ann Coulter showed up too. Those were great times. I miss them. I’d sign up for another one in a heartbeat.

What things have you done in the electric smoker? I’ve never thought about that - we’re apartment dwellers, but that seems like something my husband could use on the balcony.

Now in the spirit of those novels....

The English Pumpkin Pie

2 cups roasted pumpkin

1 cup condensed milk

1/2 cup molasses

1/2 cup sugar (optional. add if you like a sweeter pie. I leave it out and it is just fine)

1 tablespoon butter

1 tablespoon ginger (Or quarter cup crystallized ginger chopped really fine)

1 1/2 teaspoon salt

Two eggs

Toss it all into your blender and let 'er rip.

When it is smooth pour into your shell (slightly pre-baked) and bake at 350 for 45 minutes. Start checking at 35 minute to see if it is done.

Love the beautiful place setting especially the corn. Great make ahead turkey gravy recipe. Nothing like the unique flavor of turkey gravy.

Hope you and my other cooking friends have a great Thanksgiving, coming sooner than I thought!

I think mashed potatoes and stuffing and gravy are my favorite parts of the whole meal.
