I too liked the food at Don Pablo’s but also had the same problem with the noise and not just there.
It seems a lot of restaurants now have a modern industrial vibe and design – very high ceilings, some 2 or more stories high, exposed pipes and HVAC ducts, etc., no noise damping. One might think the high ceilings would disperse the noise, but it only serves to amplify it and it echoes around.

Friday, I went to an afterwork Happy Hour for a send off for two people who were leaving our department/company.
The bar was beautiful, with lots of exquisite timber framing but as more people came in, I could barely hear any conversations of people sitting next to or across from me.
I did learn some 10+ years ago when I had to get a basic physical for a job that included a hearing test, that I had some minor hearing loss, probably from going to concerts and listening to music on headphones at too high a volume. :)
