In Chicago we have this website that tells you everything that is going on in the city and suburbs, so I was trying to find different things that are happening in my area when I came across this...

Hamilton Lakes
Thorndale Road and Arlington Heights Road, Itasca
Dennis Quaid and The Sharks perform at 8 p.m. Food vendors and a beer/wine tent open at 5:30 p.m. Fireworks at dusk.

I looked a little further and it says, "Yes, that Dennis Quaid and they are better then you think."

The Black Bean Salad sounds fabulous. I think I'll make it for the 4th. Maybe use Rotel tomatoes with jalapenos. Mmmmmmm. That chicken veggie soup I had for lunch didn't last long. Get me to the gym!

I've tried it with Rotel (didn't have any fresh tomatoes), but I don't like it as much as with the fresh tomatoes and red onions. However, Ranch Style beans makes a nice black beans with jalapenos that works nicely and saves you a few steps. I hate to peel jalapenos, b/c the next day I can't put my contact lenses in. =P

I'll have to wait until tomorrow for all my preparations. I'm wearing a Holter Monitor for the next 24 hrs., though my EKG was normal yesterday. The Doc wants a good look at what's going on. It is cumbersome, but I can take it off about 8:00 am tomorrow and take it back up to the Doc's office. Then I'll be free to do all my shopping.

We're doing burgers and chicken breasts on the grill. It is just NOT the 4th without grilling your dinner! And I will HAVE to get some watermelon!

Thanks for the tip. I'm lazy, I use the canned jalapenos. You're right about the Rotels...better in cooked recipes, not for a salad. And I've tons of tomatoes left from our party last weekend.

Which reminds me....here's a VERY EASY, but lovely appetizer. It was the only item at our party that we ran out of. (These ran out before the meatballs)

TOMATO/BASIL ROUNDS

Take very fresh white bread and use your round cookie cutter ( or a champagne glass) to cut two rounds out of each slice of bread.

Spread each slice with mayonaisse, sprinkle with paprika.

Slice ripe Roma (plum) tomatoes (cold) about 1/4 inch thick. Place a tomato slice on each piece of bread. Salt and pepper to taste.

Top each piece with a crisp, cold basil leaf.

(If they need to be stored for a while, put a slightly damp cloth in the storage container with the rounds. Layer the rounds with wax paper)

The basil flavor practically "explodes" in your mouth...guests will gobble these up...and they're pretty to boot!

Here's a heads-up about a movie on TV tonight. I don't know much about it, but saw the previews a couple of weeks ago and it looked very romantic. Here's what TV Guide says:
The End of the Affair
Bravo Channel 6pm, EST

Ray Fiennes (Schindler's List)plays Maurice, an angst-ridden novelist who's in love with Sarah (Julianne Moore), the wife of his friend Henry (Stephen Rea). In Blitzkrieg-ravaged London, Maurice and Sarah have a torrid affair, which unfolds in a series of flashbacks. Years after Sarah abruptly ends the forbidden romance, Henry tells Maurice that he suspects his wife has been unfaithful. Henry finds Sarah's behavior increasingly peculiar, but neither he nor Maurice really understand why she has changed.

Hmmmmmmm....sounds good.

Didn't Nicole leave him? If she did she's smarter than I gave her credit for.

I had read somewhere that Nicole left him because he didn't want the kids raised Catholic and she did. He wanted them raised in the Scientology thing he does and Nicole, to her credit, apparently said NO WAY! And this silliness about not raising kids in America; his kids have never lived here as far as I know. They've always lived in Australia, and with the divorce, will continue to live there with Nicole.

AM-Wow, that black bean salad sounds wonderful....

L...am pasting in your garlic baked hashbrown recipe here for easy retrieval....

LODWICK's Garlic Hashbrown Baked Potato Casserole

Approximately 2lbs frozen hash brown spuds (I can only find the 30oz size, but that's ok.)

8oz sour cream
1 can nacho cheese soup
6 chopped green onions - or to taste
2/3 cup melted butter
16 oz melted Kraft Hot Mexican Velveeta (which is not really hot.)

Mix it all up, sprinkle w/paprika
Bake 1 hour @ 350, or till golden brown -

L:(when does one add the garlic butter seasoning (prebaking I assume) and how much)

My real estate partner called from his hospital bed to let me know that he would in all likelyhood be cracked open tomorrow for a valve job. Yikes.

Crabmeat-Stuffed Deviled Eggs

Ingredients
*12 large eggs, hard-boiled, shelled, and cut in half lengthwise
*1/4 cup mayonnaise
*1 teaspoon Dijon mustard
*2 tablespoons fresh lemon juice
*1 tablespoon minced fresh parsley or dill
*1/4 teaspoon salt
*1/4 teaspoon hot sauce
*1/2 pound lump crabmeat,
picked over for shells and cartilage *1 ounce caviar or salmon roe, optional

Preparation
Remove the yolks from the whites and put in a medium bowl.
With the back of a fork, mash the yolks.
Add the mayonnaise, mustard, lemon juice, salt, and hot sauce, and mix well.
Add the crabmeat and gently stir to mix. Spoon equal amounts of the mixture
into the egg white halves and chill for at least 2 hours before serving.
Prior to serving, top with caviar.

Makes 12 servings

Savory Crab Stuffed Mushrooms

Ingredients

*3 tablespoons butter, melted
*24 fresh mushrooms
*2 tablespoons butter
*2 tablespoons minced green onions
*1 teaspoon lemon juice
*1 cup diced cooked crabmeat
*1/2 cup soft bread crumbs
*1 egg, beaten
*1/2 teaspoon dried dill weed
*3/4 cup shredded Monterey Jack cheese, divided
*1/4 cup dry white wine

Directions

1 Preheat oven to 400 degrees F (200 degrees C). Prepare a 9x13 inch baking dish with 3 tablespoons butter. 2 Remove stems from mushrooms. Set aside caps. Finely chop stems.

3 Melt 2 tablespoons butter in a medium saucepan over medium heat. Stir in the chopped stems and green onions and cook until soft, about 3 minutes. Remove saucepan from heat. Stir in lemon juice, crabmeat, soft bread crumbs, egg, dill weed and 1/4 cup Monterey Jack cheese. Thoroughly blend the mixture.

4 Place mushroom caps in the buttered pan, and stir until caps are coated with the butter. Arrange caps cavity side up, and stuff cavities generously with the green onion and crabmeat mixture. Top with remaining Monterey Jack cheese. Pour wine into the pan around the mushrooms. 5 Bake uncovered in the preheated oven 15 to 20 minutes, until cheese is melted and lightly browned. Serve warm.

Makes 8 servings

One can never have too many recipes for devilled eggs, can one....here is another...

Avocado and Jalapeno Stuffed Eggs

4 large eggs, hard-cooked, peeled and halved lengthwise
1/3 cup mashed ripe avocado
1 tablespoon minced fresh cilantro
1 tablespoon minced scallion (white and light-green parts)
1 to 2 teaspoons minced, seeded jalapeno
1 to 2 teaspoons fresh lime juice
1/4 teaspoon kosher salt, or more, to taste
Fresh cilantro sprigs for garnish

1. Remove yolks from the whites and mash yolks in bowl with a fork.
2. . Add avocado, cilantro, scallion, 1 teaspoon of the jalapeno, 1 teaspoon of the lime juice and the salt. Mash with fork until blended. Taste and add more jalapeno, lime juice and/or salt, to taste.
3. Using a teaspoon, carefully stuff whites with yolk mixture, mounding the tops. Garnish each stuffed egg with a small cilantro sprig.
