Banana Nut Bread

1 cup sugar

2 eggs

2 cups flour

1 tsp. baking soda

1/2 tsp. cinnamon

4 large ripe bananas, mashed

I start each morning with Quaker Banana Nut oatmeal w/banana slices and all washed down with vanilla ice cream flavor whey protein in 16oz skim milk. Yummy!

Can it be halved? Does the recipe make 2 loaves? I have 2 bananas at home, about ready to be baked into bread.

If your bananas are REALLY ripe, peel and cut into slices, FREEZE, and after frozen put them into a small Food Processor and whirl until it changes sounds and VOILA, you have banana ice cream texture! YUMMY.
