This versatile salad is great on a sandwich, on a cracker or served over a bed of lettuce.

I like chicken salad, this recipe sounds great!
Whoa - 2 cups of mayo?! Just put enough so that it’s moist to your taste, I’m pretty sure that won’t be 2 cups worth.
I always look at the recipe when you post, but I have to say that this site has the most fat-laden recipes I’ve seen in a long time. The general ideas seem ok, but they could all use a little lighter hand with the fat.
I love chicken salad!
Way too much mayo, and I would use green onions with alot of green top.
Now way!
Asa chicken salad purist in therse matters the ONLY ingredients should be"
Chicken breasts boiled and finely chopped.
Scallions fresh and finely chopped according to taste.
Celery salt, lightly added.
Pepper also lightly added.
Mayonaise, added to taste or desired moistness.
Anyone adding relish or pickles should be taken out and shot!
That looks yummy! Thanks for posting! I’m going to try it. :o)
Where can I get a good egg salad sandwich in Calif? Answer. Nowhere.
Cut out the pineapple and use red grapes sliced in half. Delicious! Also, sounds like too much mayo—just need enough to moisten everything.
Haven’t had egg salad in years. HMMM.
I like red onions!

My chicken salad:
4 breasts
2 stalks of celery
1 bunch green onions
dash of lemon juice
mayo to moisten
top with toasted bread crumbs and paprika.
forgot the garlic powder
Looks like a good recipe. Something a little different for chicken salad. thanx.
You guys are making me hungry. Think I’ll go home and eat the rest of my turkey breast salad on 7-grain bread. Mmmmm, mmmmm, good.
Mix equal parts sour cream and mayo - add celery salt to taste - then mix in a couple of stalks of fresh celery chopped fine and the chicken.
If you need more moisture, mix a little more of the mayo/sour cream mixture.
This is the basic recipe and is wonderful like this - or you can add chopped nuts, dried cranberries, grapes - anything you like in a salad.
Curried Chicken Salad
Two cups chicken breast, preferably poached
Quarter cup of chopped celery
Half cup of seedless grape, sliced in half
The best mayo you can manage
Curry powder to taste
Big Y sells frozen lobster & I always watch for the buy 1 get 2 free sales. Rich as heck, but I wanted to let my husband know I love him & to make up for being cranky (Fractured my ankle & foot, I'm not happy when I'm forced to stay off my feet for a few days)
My chicken salad - not pineapple, but apples or red grapes (also have added chopped dried apricots, hate raisens, but you may like them), celery, onion, touch of mayo & a light sprinkle of poppy-seeds & of course, salt & fresh ground pepper
My chicken salad:
cubed or shredded chicken
a couple diced apples with or without skin
raisans
walnuts
celery
mayo (easy on the mayo)
if you like curry, a little curry gives it a nice flavor
Great as a wrap.
For anyone in the Raleigh area, Tookies has the best chicken salad. Look them up, there are 3 of them I believe.

I've never had that. Is it a taste you have to get used to, or did you like it the first time you tried it?
That is the exact recipe I use, but I call it Waldorf Chicken Salad. I chunk my chicken rather than evenly dice or shred it though. Think I use Fuji apples also (without the skins).
I stopped at the pineapple.
I keep a little known herb in my garden called lovage. It tastes like celery (most “celery seeds” you buy are lovage seeds). Chop some up and put them in there (without the pineapple) and now we’re talking. It’s also good in soup when you’re out of celery. And it’s a perennial.
I use half mayo and half nonfat plain yogurt in recipes that call for mayo and it softens the tang a bit and makes it more creamy.
I no longer eat meat, so this is how I make my ‘chicken’ salad these days:
1/2 tub of firm tofu, frozen and thawed OR pack of firm Mori-Nu tofu. The frozen tofu has a chewier texture, but you have to remember to have frozen tofu around.
However much onion, green pepper, celery, and red peppers or pimentos that you want.
dash garlic powder
dash curry powder
pepper & sea salt to taste
sprinkle nutritional yeast
sprinkle sage or poultry seasoning
an amount of veganaise (or mayo if you are vegetarian and not vegan) to the consistency you like
Mix ‘em all up. Chill it if you have time, serve.
This gives you 2 sandwiches or 2 big scoops on lettuce. I rarely go by measurements unless it’s a new recipe. I suspect people know how much spice they like, so put in however much or little you want.
<I stopped at the pineapple.
I hear you. I’ve seen grapes, walnuts, and apples in chicken salad, but not pineapple. I’m not sure if I’d like it.
I like any amount of chicken you happen to have around, finely chopped, red onion finely chopped to taste, mayo (best foods preferably) to moisten, and Pappy’s Seasoning to taste. I never measure anything. Serve on white Rainbo bread toasted.
I have about 4 pounds of wings i will be making stock from. might use the remaind to make salad. Pineapple will not be part of it.
