Over the past decade or so, I have noticed that seemingly every small town in "America's Heartland" has gained one or more Chinese restaurants. It was not THAT long ago that when someone "in flyover country" wished to eat at a Chinese restaurant, it was necessary to drive for an hour or longer -- each way -- in order to find the closest one.

What I cannot figure out about some of these places is how in the world they stay open. I know of two that have very, very few customers — far too few to make either viable restaurant businesses; the rent alone is far larger than their gross. Yet both have been open for many years now.
