"Obviously I am obsessed with making a decent breakfast sandwich. I’ve accepted that Oopsie’s are still a useful tool to have around but in terms of holding a sandwich in your hands, it doesn’t cut it. Enter contender number 2, the famous “minute muffin”.....I made this and I can't cook. Its not bad sort of like a bran muffin. I tried it with sugarless jam...

Yikes! That is one giant muffin.

Lets make it smaller so we can see it without scrolling back and forth.

If you’re looking for a low-carb breakfast sandwich, why not drop the bread altogether and grab a tortilla for a breakfast burrito?

and what about the taste and texture?

I had tried the Paleo Bread (made from coconut) it was really pretty terrible.

on the other hand, ive had good luck wiht Carb Smart, 3 net per slice....

and karbkruncher bagels, regular,cinn/raisin, and multi grain, 5 or 6 net carbs....

here in pittsburgh, our great local mancini’s bakery makes a low carb italian, i think itz 7 grams a slice...pretty good too

Great idea. I’ve done the minute muffin thing with blueberries, cinnamon and a little chocolate powder. good stuff. Of course, flax muffins should come with a warning: eat too many and they will clean you out. Not that this is a bad thing, but newbies should be forewarned.

I’m going to try something similar this weekend with almond flour and maybe flax mix.

It is like a bran muffin as far as taste and texture. I tried once useing Cauliflower as a potato substitute -—UGGG-—Its not like that... The next time I’l make a hole in the muffin dough center and fill it with sugarless jam. ....If I was making this for a Sandwich I’d add a pinch of salt. (Sorry about the GIANT photo my html is basic) ...Note there a lot of ideas at the site...

It looks like something I would scrub a pan with! Are you sure it is safe to eat?

If you get a good result with that, newheart, please post it and ping me!

What I’ve been doing for breakfast is to have a hearty bowl of non/low-gluten grains and protein sources.

Morning Breakfast Mix:

1 Tbs Chia seed 60 cal
½ Tbs Wheat Germ 30
½ Tbs Flax Seed (grnd) 15
1 Tbs Wheat/oat Bran 10
1 tsp Bee Pollen 20
1 Tbs Barley (rolled) 20
__
155 cal

I boil water for my tea, and put a little stevia on the cereal along with other seasonings, and put water over it and put a saucer over the bowl and let it steep for about 10-15 minutes. We don’t use a microwave, but you could probably do that as well. By the time the egg is ready, the cereal is ready if you use the preheated water method.

I change the mix from time to time. I often will use quinoa flakes, leave out the wheat germ, or add some coconut oil. But this is the basic idea. If you have never worked with chia seeds before, be aware that they create a gel like substance as they absorb water. They look funny but are INCREDIBLE protein sources. Quinoa flakes also look kind of funny when cooked, but are considered one of the few complete plant proteins and taste very good.

I also like to take one serving of Egg Beaters and put it into a small pan which has been sprayed with cooking spray. Then I crack a whole egg over that and then over easy. To get a crunch, I use a handful of finger food baby carrots and other fresh veggies- my favorites are radishes, daikon radish sticks, cucumbers, raw turnip sticks. I never liked radishes of any kind before...nor the idea of raw turnips - but truly they are worth a try!

egg - 70 cal
eggbeaters - 25 cal
____
95 cal

“If you get a good result with that, newheart, please post it and ping me!”

Here you go...

Almond Flour Muffin

1/4 cup of almond flour
1 tsp baking powder
2 tsp cinnamon
1 tsp coconut oil
1 packet of stevia
1 egg.

Mix it in a regular 8-10 oz coffee mug and microwave for about a minute.

Turns out a little lighter than the same thing made with ground flax, and it is a bit less bitter than flax. 2g carbs and 3 g fiber. Not sure about calories.

Maybe mix in some dried blueberries, or leave the cinnamon and stevia out for a less sweet taste. Would make a great muffin sandwich like the giant one pictured above.

Oh YUM! Do you think this will work ok in a toaster oven? Can’t see why not. So this is a single serving...perfect!

Thanks so very much!

Copied and placed in my favorite recipe file!
