Easy winter suppers *Meat-Loaf*

"Meat loaf and mashed taters, and maybe some steamed summer squash on the side. Meat loaf needs gravy or its juices, on top.

At the Maggie's HQ, we make meat loaf the Italian way: Italian Meat Loaf Recipe. Italian-style meat loaf usually has a dash of nutmeg and/or allspice in the recipe, but that particular one does not. I do not think they make this in Italy. Maybe it's a modified meat-ball recipe, but they don't eat meatballs in Italy either. (Nor do Swedes cook Swedish Meatballs.)

Best thing about meat loaf? Meat loaf sandwiches the next day or two. White bread only, plenty of mayo."

Italian Meat Loaf Recipe

Prep Time: 20 minutes...Cook Time: 1 hour, 15 minutes...Total Time: 1 hour, 35 minutes

Yield: 6 to 8 servings

Ingredients: •1 pound ground chuck beef •1 pound ground pork •3 large eggs, lightly beaten •1/2 cup Italian breadcrumbs •1/2 cup minced sweet onion •1/3 cup grated Parmesan cheese •1/4 cup chopped green bell pepper (sweet capsicum) •3 large garlic cloves, minced •1/4 cup chopped fresh parsley •1 Tablespoon chopped fresh oregano or 1 teaspoon dried •1 Tablespoon chopped fresh basil or 1 teaspoon dried •1 teaspoon kosher salt •1/2 teaspoon ground black pepper •3 ounces (about 1/4 cup) tomato paste (half of a 3-ounce can - freeze remainder for other uses)

Preparation:

Preheat oven to 375 F.

Place ground beef and pork in a large bowl. Top with eggs, breadcrumbs, sweet onions, Parmesan cheese, bell peppers, garlic, parsley, oregano, basil, salt, and pepper. Use a large carving fork to mix the meatloaf, folding the ingredients and pulling the fork tines through the mixture as you turn the bowl. Do not overmix or meatloaf will become tough.

Scrape the mixture into a loaf pan and smooth the top, but do not pack it tightly. Spread the tomato paste (may substitute ketchup) to cover the top of the meatloaf. Place the loaf pan on a baking tray to catch any drips that may bubble over. Bake for 1 hour and 15 minutes. Let meatloaf rest for 15 minutes before cutting to serve.

I just got a package of ground chuck out of the freezer about an hour ago to do meatloaf tomorrow.

Betty Crocker has served me well through the years, but ready to try something new.

They do eat meatballs in Italy. The don’t eat spaghetti and meatballs together.

Who can't make meatloaf? My recipe is 3lbs of ground beef + whatever else I have laying around. Still damn good!

The best thing about your “tree” is that there will be a lot of crusty edges.

I like steak rare, but meat loaf kinda “Krispy Kritter.”

Sounds like a good recipe. I make mine as my Mom did with uncooked oatmeal instead of bread crumbs. The best meatloaf is made with ground beef, pork and VEAL, but alas, veal costs as much as a car payment these days. Also, some grated carrot adds a little color and Vitamin A.

I never ever put green peppers or pickle relish in my meat loaf. They sour the flavor in my opinion. Instead of ground pork, I use Jimmy Deans hot ground sausage; gives the mix a lift. More eggs gives a more moist meat loaf so do not be mingy.

Cold meat loaf sandwiches the next day? Who wants to get closer to Heaven than that?

Cuisanart a onion. Mix it with ground beef (80/20 and 93/7). Add bread crumbs, egg and lots of ketchup. Onion powder, garlic powder, salt, pepper and a bit of smoked paprika.

Cook meatloaf until meat is pink. Pour tomato sauce around the meat loaf and finsh. Fat mixes with sauce. Add ketchup to sauce, mix well and top meatloaf with that.

Sauce also goes good in the middle of a pile of mash potatoes.

I also add carrots & celery, along with the onions & peppers like the above recipe.

However, I dice all of the veggies and cook until soft in about 2-3 TBS of butter. Then, I add the butter/veggie mixture, slightly cooled, into the rest of the meatloaf mixture.

Trust me...it is REALLY good that way...but then what isn’t with extra butter...LOL!

I hate meatloaf. My momma made it every time dad was gone because she loved it.

I would rather have a straight hamburger patty to eat or a hamburger steak, but no meatloaf.

My wife made a meatloaf a few weeks ago. It tasted as bad as it did 60 years ago.
