Bacon butties will not kill you

I hate “eating x gives you y” stories. Nearly always, associations between particular foods and drinks and specific illnesses are weak, riddled with confounding variables and describe increases in marginal risks that shouldn’t really worry us. If eating pickled fish tongues, say, doubles your risk of developing cancer of the Lower Hobsonate Iltoid, that only sounds worrying until you realize that in the whole of human history there have only been three recorded cases of this ghastly (and wholly made-up) disease.

So what do we make of the news that high consumption of processed meats such as bacon, sausages and salami is responsible for one in 30 early (i.e. pre-65) deaths. Put another way, consuming 160 grams (5.6 oz) of sausages or bacon a day will, on average, increase your risk of keeling over through cancer of heart attack before that age by about 75 percent. Eat less than 20 grams or so (0.7 oz) of processed meats a day and you will reduce this risk dramatically. This is a big study published by proper scientists in a respectable journal (BMC Medicine). So should we take the Big Bacon Scare seriously? …

Add some provolone, olive oil and lettuce and fresh Italian bread, maybe some provolone ... heaven!

Followed by an Italian sausage and pepper grinder with tomato sauce that the peppers were sitting in until total defeat.

Fresh side meat is better than bacon. The only thing wrong with bacon is the heartburn.

Seriously?? Less than 3/4 of an ounce??

That little wouldn't even come close to making a decent sandwich. Could you even taste that small a sample of it?

The only thing wrong with bacon is the heartburn.

The heartburn comes from the ADM wheat by-products you eat it with - just dump those and have more eggs, instead. :)

Great fliches of bacon fed the Pioneers going West along with flour and beans. My own ancestors crossed the Plains in the 1840s and 50s fueled on sour dough and Bacon.

Many in the media and on the left in general are oh, so fond of quoting Ike's farewell address when it comes to their bleating about, "the military-industrial complex," so much so that phrase has become a regular term of our political discourse.

Curiously, Eisenhower also warned of another threat in that speech which he saw of equal danger, yet you never seem to hear much about the, "scientific-technological elite."

Eisenhower's address is fascinating to read in its entirety, especially with the benefit of 50+ years of hindsight, and in the context of the global warming scandal, etc. Specifically, Ike warned:

"Akin to, and largely responsible for the sweeping changes in our industrial-military posture, has been the technological revolution during recent decades.

In this revolution, research has become central, it also becomes more formalized, complex, and costly. A steadily increasing share is conducted for, by, or at the direction of, the Federal government.

Today, the solitary inventor, tinkering in his shop, has been overshadowed by task forces of scientists in laboratories and testing fields. In the same fashion, the free university, historically the fountainhead of free ideas and scientific discovery, has experienced a revolution in the conduct of research. Partly because of the huge costs involved, a government contract becomes virtually a substitute for intellectual curiosity. For every old blackboard there are now hundreds of new electronic computers.

The prospect of domination of the nation's scholars by Federal employment, project allocations, and the power of money is ever present – and is gravely to be regarded.

Yet, in holding scientific research and discovery in respect, as we should, we must also be alert to the equal and opposite danger that public policy could itself become the captive of a scientific-technological elite."

I was at the Asian Market yesterday. They had bacon-sliced pork belly. Unsalted, uncured, just very fresh. Think I’ll try some next time I shop there.

I don’t believe any of the stupid “studies” that are reported in the media. Most of them are invalid because they invite the public to mix up causation and correlation. (sorry, most of the public wouldn’t understand those two big words)

Also, they do not consider other important factors.

I continue drinking my coffee.
