You are welcome. Later on I will do one for pork spare ribs, without all that nasty sauce.

Spare ribs are expensive here.

Not a good deal, since they’re spare and all.

;-)

We have a smoker BBQ, and I’m going to read the rest of the thread to see how to do a big piece of meat like that.

Yum.
*drool*

Wait..I haven’t caught up yet...you don’t like the sauce?

Too much sauce and you don’t get to taste the flavour of the meat. Making a good texas sauce could be an all together nuther thread, thanks for the hint.

I assume it is similar to the Weber Smokey Mountain, which is also an upright smoker. The coals are placed within a ring at the bottom of the smoker. The WSM also includes a water pan which helps moderate the heat and has two grates on which to place food.

The Green Egg is supposed to be a really good product, but is much different in design than most smokers. It’s pricey.

The grill I’m using I bought at Sams on sale right after labor day for about $125, had it for about 5 years. Hard for me to cook without a side firebox.

That’s because this BBQ discussion is about Texas not Carolina style ‘que. Carolinians are the ones who get testy and go to war when it comes to BBQ.

Yeah, I think the side firebox design is really good. I have a WSM and it took a long time for me to sorta master it. The WSM is a perfect size for us, but it would be too limiting for a lot of people. As with most things built by Weber, the quality is really good.

My suggestion on making perfect tender brisket....
Step 1. Find an old man with no teeth.
Step 2. Let him do the cooking.

Good one!

Oh God, no. I've got no use for Big Green Eggs, I'll stick to cooking over the indirect heat put out by a mix of a mesquite and pecan logs burning in the firebox of The Beast®

See The Beast at post #21

It's tx_eggman because eggman was taken. That's a nickname I picked up at a work sponsored hard boiled egg eating contest about 40 years ago ... just after the Beatles released "I Am the Walrus". Add to that mix the fact that the first syllable of my last name is egg and it stuck ... go figure

$1049 for the XL and it can handle two 20# turkeys. Also seems to be VERY EASY to keep clean. The large is about $750 and good for most needs.

I'm not a Texan! I'm Alaskan. (Can you say Moose Brisket?) LOL!

Here is my recipe for "Moose Rub":

2 cups Dark Brown Sugar
1/3 cup coarse salt (Increase to 1 cup if you are smoking fish)
1 cup Paprika (smoked is better)
1/4 cup Garlic Salt
1/4 cup Onion Salt
2 TBSP Celery seed
1 TBSP Thyme
Ground cayenne pepper to taste.

That’s because this BBQ discussion is about Texas not Carolina style ‘que. Carolinians are the ones who get testy and go to war when it comes to BBQ.

It's funny you mention that. A friend of mine owns a barbeque restaurant here in Jersey (not the afore-mentioned sucky one, his is quite good). But he's not loyal to any region. He does Carolina style pulled pork, Texas beef brisket, and both Kansas City and Memphis ribs. And it's funny, the most critical people are almost always the Carolinians.
