I have never tried peanut butter spritz - I’ll look around for a recipe and check with my Mom. :)

I hate it when you lose a recipe! One year Mom & I made these Eggnog Logs...and we’ve never been able to find the recipe again. They were similar to what you stated, but they had this eggnog frosting that was OUT of this world!

I’m on a MISSION now, LOL!

Yes, GF cooking can be hard. Luckily many stores have started to carry GF products and mixes. And yes, GF homemade food does not have the same sort of shelf life as regular food. Our homemade GF bread tends to get stale and crumbly a little faster than regular bread...I guess it is the difference in flours. I don’t know about the cookies though; ours never last very long in this household of seven! :)

These are unbelievably good especially if you like chocolate. Note there is no flour!

Easy Chocolate Macaroons

Prep Time: 15 min
Total Time: 27 min
Makes: About 2 dozen cookies or 24 servings, 1 cookie each

2 squares Unsweetened Baking Chocolate
1 can (14 oz.) sweetened condensed milk
2 squares Premium White Baking Chocolate, chopped
2 cups ANGEL FLAKE Coconut
1 cup Chopped Pecans

PREHEAT oven to 350°F. Microwave unsweetened chocolate and milk in large microwavable bowl on HIGH 2 minutes or until chocolate is almost melted. Stir until chocolate is completely melted. STIR in remaining ingredients. Drop by heaping teaspoonfuls, 2 inches apart, onto greased baking sheets. BAKE 10 to 12 minutes or until tops are set. Immediately remove from baking sheets to wire racks. Cool completely.

Nutrition (per serving) Calories 160 Total fat 10g Saturated fat 6g Cholesterol 5mg Sodium 50mg Carbohydrate 16g Dietary fiber 2g Sugars 14 g Protein 3 g Vitamin A 0 %DV Vitamin C 0 %DV Calcium 6 %DV Iron 2 %DV
