Is squirrel the perfect austerity dish?

Grey squirrels are ubiquitous in North America - scurrying across our lawns and up our trees, burying nuts and taunting our tantalised dogs.

Bright-eyed and bushy tailed, squirrels are cute, furry and, apparently, very edible.

The notion of stewed squirrel may not tempt everybody's taste buds, but in an age of tightening belts and financial severity, the humble abundance of the squirrel is causing some to reconsider its epicurean virtue.

American hunter William Hovey Smith, a self-described outdoor enthusiast, loves a spot of squirrel stew, made of course from critters he hunts himself.

"It is certainly a very American dish. We've eaten it since colonial days. In fact sometimes, during hard times, a lot of people primarily subsisted from squirrel meat, just for want of anything better," Mr Smith says.

Read “King Rat” by James Clavell (spelling?). The prisoners of war caught rats and sold the meat as a delicacy. Rats/squirrels. Small difference.

Many years ago, I had a boyfriend whose arents were from North Carolina. We had ‘Shake and Bake’ squirrel legs many nights. They were yummy.

With a father brought up on the family farm in the hills of southeast Kentucky squirrel pie (more of a cobbler, really) was a regular part of my childhood diet. Very tasty. And the practice of shooting the little critters out of tree tops with a .22 or a .410 shotgun definitely bred good marksmanship.

Just who are these people who do the "squirrel stew" thing? What you do after dressing out the meat is take the pieces, slather them with milk, then roll them in cornmeal and fry them in an iron skillet.

There's nothing finer on this Earth.

My mother grew up in North Carolina, during the depression. I believe they ate quite a few things other than beef, pork, and chicken.

They could not afford to be too picky, and my grandmother was reputed to be a good cook. I am told, though, that she drew the line at 'possum. She would not cook one of those!

Quite a few of the great marksmen of earlier generations were created by their father giving them a .22 rifle, a bullet, and telling them “if you want to eat meat tonight, hit the squirrel with your only shot”.

Squirrel are classified as game, and game can be eaten without the bothersome labor of raising domestic animals that are usually set aside for household consuption.

Also, harvesting game is fun..

Corn meal goes great with squirrel, much better than flour. Stews should have corn in them too.
