A healthy dog will not defecate in a moving car while it is in the interior of the car.

I don’t want to argue, but yes... they will. A perfectly healthy dog can and will go in a crate while in the car if they have to go bad enough. Some whine and you can pull over in time to let them out, some just go. Ask any professional handler or anyone that travels a lot with dogs in crates, they will go in it. It’s not their first choice but if they have to go bad enough, they’re doing it in the crate.

I travel with my dog too and I can't even imagine putting him in a crate on top of the car. Even with him in the back of the van, I stop on a regular basis to make sure he is adequately exercised and watered. A dog getting the squirts is usually because of fear, either way, a 12 hour trip with the top on top of the car is way too much.
BTW the dog didn't just "crap in his crate" if it was dripping down the back window of the car.
