I made these 2 days ago, and they’re NOMS!

Iowa Ham Balls

Ingredients

3-1/2 pounds ground ham
1-1/2 pounds ground beef
3 eggs, beaten
2 cups milk
3 cups graham cracker crumbs
2 cans (10-3/4 ounces each) tomato soup, undiluted
3/4 cup vinegar
2-1/2 cups packed brown sugar
1 teaspoon prepared mustard

Directions

In a large bowl, combine first five ingredients. Using a 1/3 cup measure, shape mixture into 2-in. balls. Place in two large shallow roasting pans. Combine all remaining ingredients; pour over balls. Bake at 325° for 1 hour, basting frequently with sauce. Yield: about 15 servings.

Apple-Blueberry Crisp

Total Time: 1 hr 10 min

Servings: 5-6

Ingredients :

1 1/2 pounds Apples (3-4), peeled, cored and cut into thick slices

2-3 TBSP Unsalted Butter

1 TBSP Cornstarch, optional

1 pint Blueberries or Blackberries

1 tsp Cinnamon

1/2 C Granulated Sugar

1 TBSP Lemon Rind, finely grated

For the Topping:

2 C All-purpose flour

1 C Old-Fashioned Oats

1/2 C Walnuts

1 C Brown Sugar

4 ounces Unsalted Butter (1/2 stick)

Cooking Instructions

Preheat the oven to 375 degrees.

In a heavy bottomed pan, melt the butter and saute the apple slices until they release some liquid and soften a little. If the juice is very thin, remove the fruit but leave the juice in the pan. Make a slurry with the cornstarch and cook for a few minutes to thicken. Remove the pan from the heat and toss the cooked apple slices, berries, cinnamon, sugar and lemon rind with the thickened juice. Turn the apple-berry mixture into a 2 1/2 quart baking dish. Combine the flour, oatmeal, walnuts, brown sugar and butter in the bowl of a food processor. Pulse until the mixture combines. Scatter the topping over the fruit and bake for 45 minutes. the fruit should bubble and the topping will turn a golden brown.

Additional Tips

Use good baking apples, like Granny Smith or a combination of apples, like Red delicious and Granny Smith for interesting textures. Use only the colored part of the rind..no white pulp or it will be bitter.

I bumped into the bread pudding thread up above and tried this recipe from another site...Nice and Easy!

Ingredients

6 slices day-old bread
2 tablespoons butter, melted
1/2 cup raisins (optional) (I used Golden Raisins)
4 eggs, beaten
2 cups milk (I mixed 1 cup heavy cream/ 1 cup milk)
3/4 cup white sugar
1 teaspoon ground cinnamon (I added a few scrapings of nutmeg - just because:)
1 teaspoon vanilla extract

Directions

Preheat oven to 350 degrees F
Break bread into small pieces into an 8 inch square baking pan. Drizzle melted butter or margarine over bread. If desired, sprinkle with raisins.

In a medium mixing bowl, combine eggs, milk, sugar, cinnamon, and vanilla. Beat until well mixed. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.
Bake in the preheated oven for 45 minutes, or until the top springs back when lightly tapped.

(I should have soaked the raisins in milk beforehand - the ones on top got a bit crispy - but still good.....Serve cold or hot....Great with Ice Cream.)

I found the recipe!

This is from Kenny Enck, who cooks for many NASCAR cup car teams in the pits.

Ham Balls or Ham Loaf

3 pounds freshly ground smoked ham
3/4 -1 pound of fresh ground pork
4 eggs
1 1/2 cup whole or 2 percent milk
2 cups bread crumbs

Directions:

Mix ingredients together and form into a loaf or into individual balls. Bake the ham balls at 350 degrees for 1 hour and 10 minutes. When the balls are three-fourths baked, drizzle some syrup on them — that’s what gives them their special flavor. Continue cooking for another 15 minutes or until done. Serve remaining syrup with finished dish. Serve with mashed potatoes and green beans.

To Make the Syrup

1/2 cup vinegar (any kind)
3/4 cup brown sugar
1 or 2 tablespoon mustard — wet

Directions: Mix the ingredients together and cook at low heat on a stovetop to make syrup.

Happy July!!!!!

My daughter’s birthday is tomorrow - so in honor of that - and the fact it is National Ice Cream Month - we brought a peanut butter cup ice cream cake or dessert at church coffee hour today......as well as assorted roll ups, hummus with pita, spinach and feta phyllo triangles, and stufed grape leaves. For a 14 year old she has rather eclectic taste, as she chose the entire menu - mom just had to make it all!!!

That party was at Church following the 10:30 service. The ice cream cake disappeared REAL fast! She’s getting chocolate cream pie tomorrow - that’s what she asked for and we’re attending a BBQ at the American legion on Wednesday. With her birthday so close to independence Day - she has always had more than one “birthday” celebration.

I’ve never tried making baklava - one of these days I will, because I just love it.

Being National Hot Dog Month, this isn’t exactly a recipe, but something that I stumbled on. I had some good quality hot dogs and found myself craving them, as well as peanut butter, then started thinking about the bacon I’d made earlier. I was disappointed to Google and find out peanut butter, bacon hot dogs weren’t an original idea. Nom, nom, nom.

Peanut butter and Bacon on toast (or English Muffin:) is one of my favorite quick meals...why not throw in a hot dog too?!

I thought a hint of grape jelly would also be a good addition to the next one, but my daughter pointed out our grape jelly was from 2009 and that was a little off putting. (I need to clean the fridge.) I didn’t think of this first, either :(

Butter Pecan Ice Cream
Eaglebrand.com recipe and pic

Whip to stiff peaks 2 cups h/cream. Fold into combined 14 oz
can Eagle Brand Sweet/Cond/Milk, cup chp toasted pecans, tsp
maple extract. Mix well. Pour into loaf pan, foil over; freeze six
hours minimum.

TOASTED NUTS Shake cup chp nuts in skillet w/ 3 tbl melted
butter to lightly brown; plate immediately to prevent burning.

Scopped into fantastic jadeite bowl with vintage scoop.

A nice pic of the latest sandwich rage---the Vietnamese Banh Mi. Light crispy baguette (not chewy rustic kind) is essential for encasing without overshadowing ing. Viet baguette made with rice and wheat flour makes for an airy crumb--at Viet or Chinese markets, Viet bakeries and delis, or make your own. Mexican bolillo roll works well as does regular baguette; avoid sourdough and overly crusty types.

The focal point may be room temp leftover grilled or roasted meat, thin slices steamed pâté (gio lua), or seared tofu. Purchased chicken liver pate, or German braunschweiger. Daikon and carrot pickle keep for days in fridge--can make banh mi whenever the spirit moves you.

PREP Half bread; remove inside crumb w/ fingers; crisp up in 325 deg oven. cool a min. Layer generously w/ mayo; drizzle w/ Maggi Seasoning sauce or soy sauce then fave meats or tofu, 3-4 thin seeded cucumber strips, 2-3 rough-chp cilantro sprigs, pickled veg, 3-4 thin jalapeño slices. Close sandwich, half crosswise for easy eating.
