Good afternoon/evening FReepers. Yep, it is Beer Thirty Time Once Again!

Good evening/afternoon brewers and winemakers. Nothing brewed at the Red Devil Brew house this week. Just enjoying a few home brews.
Tip: If you have ever been disappointed with your homebrews not developing a nice long lasting head or they seem to be over carbonated and really heady when you pour a glass of your homebrew you might want to try cleaning your glass or mug. Use a mixture of equal parts of Baking Soda and salt then add a little water to make a paste. Use this paste to scrub the inside and while at it the outside of your glass. Rinse well and let dry before using. You might be surprised at the results next time you pour a glass of your homebrew.

Frozen. We were told that freezing helps to break down the cellular wall, so juice flows more freely. And it makes it easier when we’re picking fruit over time. We have a great big blackberry bramble on the edge of our property. I start picking mid to late August & get about 5 lbs every two days. They all go into the freezer, & when we have 40 lbs or so, we start a batch.

Yep freezing the fruit does help. Did the same thing with cranberries in my cranberry Mead. It is nice you can pick blueberries fresh off your own (bush/tree?).

I am having one of my last Honey Ales. I only have six left! They are so good! I started them last month and bottled on June 20. Yum!

The Honey ales are good. Only problem is they don’t last long....
Remember the lager I had to pull out of the lager fridge awhile back because I needed the refrigerator? To try and save the ferment we stuck the bucket over a floor AC vent with a heavy blanket over it until ready to bottle. It worked! Popped the first bottle yesterday and its like there was no problem with temp.
Lol both the kids in bed so that isn’t happening! I love them more than words can express, but some days I just want to walk out the door and not come back for a few days! We’ve had rain for three days and my kids are constant movers. My son hasn’t taken a regular nap since he was 16 months. They both sleep 8-8, but not being able to go outside and burn off energy officially got to them today. It got to me also.
One question regarding the StarSan, however...when I wash and sanitize the bottles prior to bottling, I know it says not to rinse them, but I’d rather not have as much foam and I do a SMALL rinse with them. I’ve had no problems with contamination but am I taking an unnecessary risk? Or is there something I can to (like drain the bottles upside down) to minimize the amount of foam in the bottles prior to putting beer into them?
So far have not had to deal with that issue so never had to figure it out. I keep the bottles in a back room inside the house, in the boxes they originally came in. I modified each box by removing the dividers and lining the inside with a heavy duty plastic trash can liner (in case one breaks), then putting the dividers back in.
Its a lot shorter walk to get them this way....

If I remember correctly the Munich Yeast was a powder. I ordered it from a New York distributor. Also a type of sugar for beer brewing. Store bought regular sugar won’t do.

I don’t bother to rinse my bottles after a Star-San rinse. I do try my best not to make the Star-San foam up and bubble like it wants to do. I use the racks in my dish washer to drain the bottles upside down after a Star-San rinse. Not all the bubbles will drain out and I just don’t worry about a small film of a few bubbles in a bottle when bottling.
I do my bottle washing the night before bottling day and leave them in the dishwasher over night.
I have been told that washing the bottles in the dish washer (using the heated dry cycle) is enough to sanitize them. I do this and just to be sure use the Star-San as a final measure.

That special sugar was corn sugar. Regular Cane sugar lends a taste to the beer described as cidery. Although corn sugar can do the same if used in excess. These sugars are usually used at bottling time and help to carbonate the beer in the bottle. Other sugars can be used also - Light and Dark Brown sugars, molasses or maple syrup and honey can be used in the boiling phase to add flavors. A clean sugar like corn sugar is usually used at bottling time for the carbonation phase.
If you brew again try one of the liquid yeasts. This time of year you should request cold shipping for a liquid yeast and it only adds a few cents, less than a dollar in most cases.

I have a couple of PET, brown plastic bottles, I use with each bottling. You can feel them and tell when they have carbonated and assume the rest are at the same carbonation level. If those plastic bottles are rock hard then they are carbed enough - although they may not be aged enough. I try one and if it is ready and tasty I am happy!
When doing my research, I read somewhere that while using a dishwasher to sanitize can be done, there are possible problems:
1- Dishwashers will not wash the bottle insides. The bottle opening is just too small.
2- If there is any Jet-Dry present it will totally kill the foam head.
I read it somewhere but can’t find it now. It seems the Puritans also had a law that you could not drink more then a half gallon of beer before breakfast...
