Annika Eriksson, a lunch lady at school in Falun, was told that her cooking is just too good.
Pupils at the school have become accustomed to feasting on newly baked bread and an assortment of 15 vegetables at lunchtime, but now the good times are over.
The municipality has ordered Eriksson to bring it down a notch since other schools do not receive the same calibre of food - and that is "unfair".
Moreover, the food on offer at the school doesn't comply with the directives of a local healthy diet scheme which was initiated in 2011, according to the municipality.
"A menu has been developed... It is about making a collective effort on quality, to improve school meals overall and to try and ensure everyone does the same," Katarina Lindberg, head of the unit responsible for the school diet scheme, told the local Falukuriren newspaper.

Yield - Three Loaves
6 slices whole wheat bread, finely chopped
4 ounces imitation cheddar cheese, finely grated
4 ounces raw carrots, finely grated
12 ounces spinach, canned, drained
2 cups dried Great Northern Beans, soaked, cooked and drained
4 tablespoons vegetable oil
6 ounces potato flakes, dehydrated
6 ounces tomato paste
8 ounces powdered skim milk
4 ounces raisins
Mix all ingredients in a 12-quart mixing bowl. Make sure all wet items are drained. Mix until stiff, just moist enough to spread. Form three loaves in glazed bread pans. Place loaf pans in the oven on a sheet pan filled with water, to keep the bottom of the loaves from burning. Bake at 325 degrees in a convection oven for approximately 45 minutes. The loaf will start to pull away from the sides of the bread pan when done.

It’s been decades, but our school had the best school cooks. They were local ladies from the community....grandmas, aunts and mostly 1st generation immigrants....and man! Could they cook up a storm!
I recall that every few weeks, they’d make fried chicken...it was to die for. The line would go out the door. Even passer-by delivery guys would stop! It was the biggest compliment that the school could get.
Eventually, their famous eats died out. Not quite sure why. Maybe because they became unionized and more government mandates forced them to conform to new standards.
The principal used to brag that his cafeteria was the only one in the district that actually *made* money.
LOL. Looks and sounds like what we had back in ‘63 for high school cafeteria lunch bill-o-fare, on Wednesdays. Brrrrr. Scalding hot tuna casserole on Fridays, was inedible torture. Annika Eriksson’s cuisine would have been hailed as a godsend!
Yet another glaring example of the inefficiencies of the public sector. If the schools were privately run the cook would be promoted to teach her techniques to all the school cafeterias.

My cohorts thought I was Catholic because I always had the fried fish on Friday. It was the one thing in the cafeteria at Jefferson Davis Jr. High that was consistently excellent.

Anyway, since the "collective" is looking for egalitarianism for all the schools - why in the name of Sven aren't they encouraging the lesser cooks to step up to Ericsson's level instead of dragging the best down? This is the problem - the least competent are ruling, and it seems to be catching on worldwide.

We are fast approaching the novel/movie, 1984, by Orwell. Everyone ate only approved food, and no one better have anything else. You were always on a live monitor for the government to watch what you were doing, at work and at home. If you read a book, they would know it and come get you as no one could read anything except what they said to read.

that’s what my shopping basket has become - i used to buy a weeks worth of groceries for about $150 - now I spend easily $200 to $230 when I shop and I have to stretch that over 2 weeks so I buy crappier food. Why? Because my cost in gas and utilities have gone up. Someone recently told me that they truly thought we were better off than we were four years... BS.

Years ago this exact thing happened to my girlfriend’s mother.
Her cooking put the other schools to shame and the admins requested she tone it down.
She chose to retire instead.

Well - this is the same person who told me that food was an entitlement (the underlying accusation was that conservatives typically would let people starve). She’s not on any kind of government subsidy - she lives in a very nice house and her husband is a medical professional. It was a really disappointing conversation.
I went to public hs in Chicago nw suburbs, from ‘63-’67, but we always had fish on Fridays. I opted for the fish sticks & tartar sauce, over the tuna casserole.
Don’t know if they’re available in your area, but you might want to try Aldi’s.
They’re a no-frills chain, and I probably save a solid 40% shopping there. All items are “house brand,” but most are quite good.
One example: 13 oz. tortilla chips, very high quality, $1.29. Doritos are usually $3.75 or higher.
The cafeteria is just mirroring the classroom. When I went to school (50’s), they taught to the highest intellects. Now they teach to the dumbest and they still fail.

I lived in Sweden in 1972-73. There was a municipal cafeteria where the schoolchildren and adults - not sure if they were city workers or the general public too - had lunch.
That food was so good. I even learned to like blood pudding, and hold my fork in my left hand, but not to hold it upside down and loaded all the way to the handle.
She did not think the menu she was supposed to produce was nutritious enough for the kids so she would cook stuff at home and add it to their meals.
She did that for years. Nobody complained.
I was recalling that in those by-gone times, around certain holidays, magical breads, like chollah, , Babka, Irish soda and Cloverleaf Rolls would appear. All wonderful!

God Bless her...she’d be arrested today...for not serving food prepared in a government/OSHA inspected kitchen.

Now, I see angry, union lakeys who just push out crap food that comes on a truck in *warmers*, that is shoveled at the kids .....who by-and-large promptly throw most of it in the garbage can.

Sadly, the sense of community is a thing of the past.
