Anyone who knows French cuisine well knows that modern French cuisine came from the work of August Escoffier, who's work on codifying French cuisine is well-known. Unfortunately, Escoffier's most important work, Le Guide culinaire, has a very extensive emphasis on sauces and less on the natural taste of food you get from other cuisines.
Me too. I prefer simple foods that haven’t been overcooked. Some Asian cuisines seem to have more nutrition; they eat more veggies.
