The problem isn't the water or ice before it falls. It is the nasty container that it falls into that never gets cleaned that's a problem.
The ones that undocumented immigrants reach into with their hands... But you are probably correct. They maybe can read the 'Employees must wash hands' sign in the bathroom.
I've worked/run commercial kitchens. There are 2 restaurants in my city that I will go to.

Years ago when I was changing a transmission and drinking beer a friend of mine while I was under the car filled my quart bottle of beer with used recycled beer and didnt say a thing until I drank the whole thing.Please tell me what brand of beer you drink so I will know never to try that brand.

I miss having a lab. There's a chocolate lab down the street that bark, bark, barks as I come riding/speedwalking up, and stops when she sees that it's me. She paces me around the corner and waits for me to come back by. ;)
Labs taught me something 3 ex-wives never could.... Toilet seat goes completely closed, lid down. Every time.

She got the idea for her project from reading an article about airline ice. I always ask for black coffee.

Not one of mine, when I was working. When a waitress sticks her hand in the ice machine? The bus-boys have to empty it and clean it. Doesn't take much of that before the hispanic bus-boys 'splain... 'don't do that' in a way that my lectures on hygiene never could.
A week of very PO'ed everybody, and then things are 'nominal'.
Some folks really, really hate me. Didn't care. My kitchen. My way. Highway. Binary decision.

Our *newer* Lab was so quiet as a juvie....I wondered, maybe, if he had some a genetic prob with his vocal cords...but now he barks at anything and anyone he thinks is in *his* territory...I’m grateful for him being the pre-door bell. We have some sort of an evangelical church in the neighborhood...whose annoying members are out soliciting funds...black people don’t like black dogs much...nor do they understand what *no soliciting* means. Heh.

This thread has been dominated by people who apparently have never worked in food service and/or health inspection.
Commercial ice machines are bacteria breeding ground - and salmonella is a surprisingly common bacteria that sets up colonies.
The instruction manual that comes with these ice machines include instructions for using deliming solution for the maker itself, and int he same cleaning cycle - to remove all ice from the bin, and use a fairly strong bleach solution to thoroughly clean it out.
I have cleaned the ice maker at the church I serve at on two occasions - the first time, after having not been cleaned for nearly 3 years - was DISGUSTING. The last time I cleaned it - it wasn’t particularly nasty. I had used the bleach solution, which apparently hadn’t been done before. Now, we are on a schedule -
