How did marshmallows get on my sweet potatoes?

I detest sweet potatoes, but the rest of the family likes them so one of my daughter’s brings them. They were marshmallow free this year I noticed.

I’ve noticed that most either love them or hate them. No in-between. I love them with or without the marshmallows.

I’m with you. I love them with or without. I make a casserole topped with brown sugar and pecans. It is delicious. But I like any kind. Even fry form.

My aunt who has now passed used to make the most wonderful sweet potato recipe. It had marshmallows, nuts on it.... Just wonderful.

Because I plopped them on top and then broiled it at the last part for extra crispy brown goodness.

No one in my family ever put marshmallow on sweet potatoes, all veggies were boiled, since there were never any room in the oven for anything but the turkey.

I much prefer the “garnet yam” variety of sweet potato to the typical orange sweet potato.

First bake the sweet potatoes, then skin and put them through a ricer. To the riced sweet potato add brown sugar, salt, and a teaspoon of lemon juice.

And here’s the zinger: instead of marshmallows on top, crumble cooked bacon! After baking in a covered casserole for a while, lightly sprinkle with nutmeg, cinnamon and clove. Serve with a pat of butter on top.

One of the biggest memories of my childhood Thanksgivings is having an unasked for sweet potato placed on me and siblings’s plates. We’d all stare down at this piece of food that we all hated as our parents demanded we take a bite out of it. It was the only time of the year we saw this thing. After trying to swallow one horrible mouthful, we all pushed it to the side and dove into the other food. Why they subjected us to that unwanted tuber is still unknown to me and my siblings. Ditto for cranberry sauce which they also demanded we try. None of us liked that either.

If I want my potatoes sweet, I’ll add butter. That is what butter is for. But I don’t do strange tubers just because it is a holiday. In fact, that is the worst time to stick weird plants in your mouth, since the hospitals are on low staffing...

More to the point, why??

A much better alternative, that bestows a bit of sweetening and moistening, is the addition of a wee bit of maple syrup. And some chopped nuts, English walnuts or pecans, chopped not too finely, add a bit of “texture.”

My mom used to fix sweet potato cass with marshmallows....sometimes with brown sugar. I loved either.

Here’s my recipe (a souped-up version of mom’s)

1 large sweet potato can feed two. I bake them on 420 F with the skins on for approximately 1 1/2 hours until tender. I bake them to retain the flavor and nutrients. For a large party, I use approx 8.

Remover taters from oven and let stand so peel separates. Peel or scoop out flesh into a LARGE mixing bowl.

Add two stick of butter onto taters and let melt.

When butter begins to melt down, add a container of condensed orange juice (do NOT dilute) little by little and blend using a hand mixer.

Lightly beat two eggs. Add to mixture. Blend with hand mixer.

Once creamy.....pour into two ungreased casserole dishes using a spatula to flatten the top.

Sprinkle with cinnamon.

Sprinkle with dark brown sugar at least 1/3 inch or more.

Sprinkle with chopped pecans over the entire top.

Melt one stick of butter in microwave and pour over the top evenly.

Bake at 325 - 350 F for 30 - 45 minutes.

Enjoy!

BTW....This recipe calls for TWO casserole dishes, to the last stick of butter is reserved for TWO. IOW....1/2 a stick for each.
