Weird World of Food: Candy Sushi

This week on my weird food journey I’m entering the world of sweet treats as I try my hand at making candy sushi.

Sushi seems to be like marmite, you either love it or hate it. It is also something which, I know from experience, is very difficult to make.

I can understand why people may be put off by it: the raw fish, the fiddly almost unmasterable chopsticks, the scorching hot wasabi, the fact that it falls apart all over the table and your lap as soon as you bite into it, but I love it.

Despite being initially apprehensive, I have found that it is one of those special savoury foods which allows you to mix together a variety of unexpected flavours and ingredients and still create something that tastes delicious. Why not try peanut and tuna, crab and avocado or beef and orange?

It’s this versatility that makes me think sushi would be a fantastic dessert and, keen to see if my theory is true, I take to the internet to see if I can find a quick and easy recipe. It’s not long before I come across something which promises to turn cereal, marshmallows and a variety of gummy sweets and treats into authentic looking sushi. It sounds intriguing so I’m definitely going to give it a go.

I start by melting some unsalted butter and marshmallows in a saucepan. I then add some crispy rice cereal and let the mixture cool for 5 minutes.

Once it’s cooled, I take some gummy and fruit belts and spoon the mixture on top of them, smoothing it out as I go. The mixture is extremely sticky and, if I’m honest, this is definitely not the easiest stage of the recipe!

After struggling for around 30 minutes to get the mixture in place, I put my sweet filling (I’ve gone for gummy bears and strawberry laces) on top of it and roll the belt to create my sushi. This stage is also a bit of a pain but, when it works, the results are fantastic.

To finish, I take some of the crispy rice mixture, shape it into a rectangle and place a foam shrimp on top of it to make some nigiri. Job done!

The final plate looks great, so good in fact that some people are fooled into believing it’s real sushi, and it tastes even better. It’s sweet, tasty and adaptable, so you can use any filling you want.

So whether you’re a fan of sushi or not, this is definitely a recipe that’s worth trying!

If you would like to try making candy sushi follow the recipe below.

6 large marshmallows

Half a cup of crispy rice cereal

1 tablespoon of unsalted butter

A packet of gummy fruit belts

A packet of blueberry fruit belts

A handful of gummy bears

A handful of strawberry laces

A handful of foam shrimp

1 Melt the marshmallows and butter in a small saucepan over a low heat

2 Take the pan off of the heat, add the crispy rice cereal and stir

3 Take a gummy or fruit belt and add the crispy rice mixture to one side of it

4 Smooth the mixture out on top of the belt

5 Choose your filling (I’ve used gummy bears and strawberry laces), place it on top of the crispy rice mixture at one end of the belt. Roll the belt up to form a sushi piece. Repeat this process as many times as you like to create the number of piece of sushi you want.

6 Take some of the crispy rice mixture and use a flat sided object (I used a kitchen knife) to turn it into a rectangle.

7 Place a foam shrimp on top of the crispy rice rectangle. Again repeat this process to create as many nigiri sushi pieces as you want.

8 Place the finished sushi on a plate and serve.

How cute.

I once had a danish in Japan that was topped with anchovies. Wasn’t half bad, actually.
