Yeah, I have this contraption for my crock pot. It’s an electronic thermometer connected to a controller so I can set the exact temperature I want the water to be (141 F today). Then I put the seasoned meat in vacuum bags, drop them in the water and in a few hours, presto! Meat cooked to the exact doneness specified in the temperature chart. Flash fry and it’s done.
You can leave it for hours and hours, and it’s still perfect. Pasteurized, even.
