“organic” is any carbon based structure.

Check your dictionary. Compounds like carbon dioxide are called "inorganic."

There are exceptions, but the general rule of carbon based compounds applies. Things like oxides, carbides, cyanides, and carbonates are considered inorganic. (like your CO2 reference)
