Dinner was a success. We were eating 12:20 which wasn’t too late for the goal of noon.

The only hitch was when the turkey and I were wrestling. I couldn’t get the neck out of the cavity because of the plastic thing holding the legs. It took forever to get that plastic thing off. I pulled and yanked and pulled and yanked. It wouldn’t cut off so I decided to cut it. The meat wouldn’t cut right so I resorted to stabbing. Pull and yank and stab and stab and stab. When it finally came loose, it blasted me with meat pieces flat into my face. I was still picking gunk out of my hair this morning. I’m the fight a draw.

Stabbing? Ha! I finally resorted to tearing the meat with my fingers to get the last bit off the breast bone. My Dad was a carving master, but it didn’t make it to me.

Glad I’m not the only one who does this! I have a 20-pound turkey defrosting so I can roast it later on next week. As you said: for the leftovers!

Actual Thanksgiving was with dear old friends and we always parcel out the cooking so no one has to do it all. Then, I go on to *do it all* a week later. I think I’m nuts!

A similar thing happened to me, because it wasn’t 100 % thawed inside the cavity. I actually got out pliers but ended up pouring a little hot water in there and that worked. I had started thawing it on Mon. You would think it would have been completely thawed.

Stuffing Waffels

Add some beaten egg and flour and a touch of oil to some leftover turkey stuffing. Cook it in a Waffle iron till browned.

Use the waffles to make sandwiches with leftover turkey add some ham and white cheese to make a pseudo montecristo. Or a little cranberry sauce........?

Apple Crumble Pie
Delicious made w/ apples from your holiday fruit bowl centerpiece. Fast and easy.

METHOD Simmer tender/covered 8-10 min-—6 peeled cooking apples cut into eighths, 1/2 cup ea sugar/water, tsp cinnamon, 1/2 tsp allspice, bit lemon juice. Spoon mixture into deep-dish 9” pieplate. Scatter Crumble (recipe below) over apples. Brown top 350 deg 30 minutes.

SERVE warm with scoop of vanilla ice cream.

CRUMBLE Use fingertips-—mix 3 tb butter into combined 1/2 cup flour, 1/4 cup brown/sugar, 1/2 tsp b/powder, pinch salt.

Instant Monte Cristo Sandwich / side of Cranberry Dip

Layer leftover turkey between two slices of French toast (can use frozen). Add slices of cheese. Saute in butter until hot, and cheese melts. Serve with side of Cranberry Dip.

Cranberry Dip-—add 1-2 tsp heavy cream to ramekin of leftover cranberry sauce.
