Way back when, the polar bear was a brown bear which adapted to colder climes. So I guess they can adapt and may ultimately return as brown bears or black ones or whatever.

All mammals are edible. They only part of a mammalian that is toxic to humans is the polar bear liver. It can be fatal eating a polar bear liver. Weird.

Polar bears are descended from grizzly bears which are quite successful omnivores.
