Yea, today was good and the Feds just closed so I have the day off tomorrow. Kind of a crazy week with an insane supervisor, but all is well.

I've got a bbq assignment for you...

That jazz show rocks! You have a day off tomorrow, and that’s almost like Mardi Gras here—it’s Tuesday, although the parades have been going on for a few weeks now, “Carnival Season,” as it’s called. But, lots of people are off work on Fat Tuesday.

Your assignment is pork steaks. I mentioned these to you before but this is a new, and easy, method.

Get 1” thick pork steaks. I buy a boneless butt and slice them lengthwise.

Put your favorite pork rub on.

Smoke indirect at 275 - 300 until they reach 185. This took 3.5 hours Saturday.

Serve with bbq sauce on the side.

Report back.

I wonder if there is another show as good as GS. The acting, sound effects, sophisticated stories and raw emotion...it really stands out. Off the top of my head I can't think of another OTR series that was so well done.

Sounds good. We’ll try that recipe next weekend.

What kind of grill do you use?

I don’t know if I can go 3 hours on the green egg @ 275 without overcooking. Can I keep it @ about 200F?

Any suggestions?

(I wouldn’t recommend 200.)

You don’t have to go 3 hrs, you need to take the steaks to 185f and mine stalled at 160 for over an hour.

We were just wondering how an indirect 275 to 300 degree grill could not overcook 1 inch pork steaks for that amount of time. No biggie.

Keith’s been running grills for about 35 years now, so he was curious. We’ll try this. It sounds excellent!
