Just made 3 jars two weeks ago. I’ve had a nasty cold and it is comfort food for that. When it gets too pungent I stir fry it with rice.

It also lures my daughter over for visits, as she lived in Korea for a year and is addicted to kimchi. It was at her suggestion that I started making my own.

If you are interested I will post my recipe.

Kimchi is actually very easy to make. 5 minutes to cut up the cabbage and put it into the brine. Maybe 20 minutes at the other end to make the red pepper paste, mix it and bottle it in jars.

It’s kind of gratifying the first time you eat some you made yourself.

As it works out, I’m going to buy some kimchi today. You find the best stuff at Asian stores.

I always spice my kimchi up even more than it comes.

Who cares about a social life, anyway?
