Why Cricket Chips Could Be the Next Big Thing

The Western palate is certainly set in its ways. Eating insects? It’s still a novelty acceptable mainly on the sets of gross-out reality television shows. This is despite the urging of scientists and researchers who say insects are a tantalizingly sustainable and environmentally friendly source of protein.

Although bugs are prevalent in the cuisines of other cultures, such as chapulines (grasshoppers) in Mexico and caterpillars in the Congo, to many Americans, there remains something, well, icky about chowing down on bugs. But three recent Harvard University graduates say they’ve found a way to change hearts and minds: Chirps, a snack chip made from ground-up crickets.

I’ve eaten ants, grasshoppers, bees, bee larvae, turtle, chicken feet, pig guts, and all kinds of wonderful things. They are all worth trying. Squid, octopus, eel, whale, horse...on, and on. Enjoy the cultural foods you have the opportunity to enjoy.

If you watch Bizarre Foods with Andrew ZImmerman he has featured several groups who have grants to develop bugs as a food product.

In one show they demonstrated how a couple square feet of bugs could meet the protein needs of a family. He specifically remarked on how much this was reduced from pigs, cows or even sheep.

That is their plan.

Deep fry ‘em and accompany them with three cents worth of a “dipping sauce” made with soybean-oil-based “mayonnaise” and the flavor of the year (has “chipotle” been replaced yet?) and Americans will eat ‘em up. That’s more or less the appetizer menu at half the restaurants in this country.

I’ve eaten grasshoppers in survival school. Greasy, but okay roasted. You would have to eat a lot of them to get any real nutritional value.

The rest of us will eat insects and swelter – ‘for the good of the planet’.
