I had to get drunk to eat raw oysters on the 1/2 shell, but it was tasty, sobered up and had some more. Caught fresh in the Chesepeake bay that morning, brought to a party and shucked it in the back yard. He ran a oyster barge.

I loved steak tartar..In the 80's I'd have it for lunch about once a week. It's all but impossible to find nowadays..because of ecoli concerns...even private clubs won't serve it on their menus...

And if you happened to like your burger RARE, or your steak bloody.....good look with that..you can't get it.

Most Italian restaurant have stopped serving carpaccio for the same reason...and it is delicious...a beautifully marbled piece of sirloin, sliced thin..then pounded out to near paper thinness..on a bed of spinach, dress with capers, parmigiano shavings, lemon, pepper, and a drizzle of EVO...sublime..

I’ve had raw oyster on the half shell, shooters.
Never could figure out the purpose to swallow them quickly so as not to taste them. I prefer to chew them up. But better to chew them cooked in some manner.

The fish used by the Japanese for RAW sushi don’t have parasites. If it were otherwise, the Japanese would all be dead by now.

All fish have parasites & pathogens.
A successful parasite does not kill the host.
The Japanese people have a high rate of parasite infection caused by eating raw fish.
Some parasites go unnoticed, others cause gastrointestinal distress. Some parasites need to be surgically removed, like the one guy in Japan with the worm in his brain.

I found slurping them down with there juices are delicious. Never thought I’d like escargot either but they are delicious in their shells with lots of butter..(not raw)
