Alton Brown's DIY Peanut Butter Is Genius

You’re an avid home cook. You make your own pestos, your own mayonnaise, your own tapenades. You dominate at tomato sauces.

But now you’re perhaps sitting at your desk wondering why you’ve never made your own peanut butter. We are.

According to Mr. Alton Brown, whose hacks we’ve featured before, whipping up your own peanut butter is as simple as frying peanuts in a wok, adding honey and salt, and blitzing them in the food processor.

Now we sort of feel like idiots. Especially since Brown delivers a killer pro tip at the end, about adding a bit of chili oil for “kind of a Southeast Asian thing.”

Excuse us while we leave work early to go fry up some peanut butter. File this under genius.

There's a lot of stuff you can make from scratch. Right now I'm making flavored syrup (for shots at your coffee bar). Ingredients (nuts, vodka, sugar) will cost less than $1. I'll refill the bottle that sells for over $4 at the supermarket.

His wife is making vanilla extract.

Vodka, vanilla beans, 6 mos. in a glass jar.

I love “Chopped” and “Iron Chef”. My favourite Iron Chef is Masaharu Morimoto. He’s brilliant.

It's great. Much better than store-bought vanilla.

I've got a small bottle with vanilla beans in it, just top it off with cheap vodka when it gets down a little. Probably Grain Alcohol would do fine, too, but I'm cheap.

Replace the Beans every few months, when I think of it. They cost a couple bucks for a small packet at World Market.

Saves money, and frankly, I like it better. I use it all the time for things like pancakes. Works just fine.

The best peanut butter we’ve found is Smart Balance. It has an intense flavor, and it isn’t nearly as sweet as some others.
