What is it about cooking bacon that makes it smell so good? The Reactions team puts its nose into everyone’s favorite breakfast food. We teamed up with the Compound Interest blog to break down the science of that sweet smell.
Turns out there are about 150 volatile organic compounds that contribute to bacon’s meaty aroma, many of them hydrocarbons and aldehydes, with some nitrogen-containing compounds thrown in for good measure.

I was just thinking yesterday of one of my favorite Sinpson’s scenes. Town picnic in the park or something like that. Homer’s walking along and sees some tasty treat (bacon, doughnut, whatever) on the ground next to some object. After an “Oooh!” of pleasant surprise, he bends over to get it, banging his head on whatever the object was. He forgets the treat, squinted eyes, pain, stands back up, hand on head, “D’oh!”. As the pain recedes, he sees the treat again, as if he’d never seen it in the first place, and bends down again to get it, repeating the entire cycle. He does it like four or five times. Hilarious!
I think it is because pigs are extremely finicky eaters.
I have a chef friend who calls bacon “The duct tape of food”!
