Miss M, there are lots of beginner’s cheese-making kits out there; you could make cheese in your Big City apartment ;-)

I’ve been wanting to try it; I think ricotta and mozzarella are probably good for beginners, and an inexpensive kit can get you acquainted with the materials and techniques. Then you can see if you want to go forward.

Thanks, JT! I think maybe this is one thing I won’t do because I’m in such a cheese-crazy area and I can buy the best (a small amount for a small price!) But I’ve been making so much jam, the paint on my ceiling is peeling.

Just for the record, I have a small apt. in Manhattan but am now at my house in NJ. Still have a small kitchen, damn it!

Very nice! I have all Nigella’s books. She recently yelled at me on Facebook after I chided her to not reveal her midnight cooking forays were really done at lunchtime. Who knew celebs read their facebook pages???

There’s never a big enough kitchen in a home. Every day my ‘dream kitchen’ develops a new dream-requirement. (Since the new cats came, it now needs a door, too. I’ve never had cats so crazy to get up on the countertops!)

Cats are loons. Mine now insists on sleeping on my computer when my back is turned. She, literally, has sent messages to people with her spine.

Cooking Light recipe--105 calories a glass--bit of fresh lime juice adds welcome tanginess.

Watermelon Margaritas

RIMS Rub rims of 6 glasses w/ lime wedge; spin rims in saucer of sugar.

METHOD blender smooth 3 1/2 c watermelon cubes, 1/2 c tequila, 2 tb sugar, 3 tb lime juice, tb Triple Sec.

Fill lime/sugared glass with 1/2 cup crushed ice; 1/2 cup margarita mix.

SERVE Garnished with lime wedges, melon balls.

Anybody do skirt steak in the broiler? I bought some at a good price and will serve them tomorrow with my creamed spinach and fresh corn from NJ.

Betcha this Nigella recipe would be good w/ skirt steak---
which must be cooked rare b/c you don't want shoe leather.

HOT AND SOUR BEEF SALAD

METHOD Grill 8 oz steak rare; tightly foil.
Steep a few minutes while you make dressing.

PLATE Cut steak into very thin slices across grain.
Set on lettuce-covered plate. Add Dressing.
Scatter with rough-chp mint or cilantro leaves.

DRESSING mix 2 tb ea Thai fish sauce, lime juice,
tea sugar, chopped red chilli, sliced scallion.

Never much of a pancake eater (too heavy many times, and they sit on the stomach for hours) The crepes and waffles are much preferred.

However, the one exception for pancakes is a Dutch Baby, or puffed pancake. Think Yorkshire pudding/popovers, a cousin to Dutch Baby The Germans eat this sprinkled with confectioners sugar, a squeeze of lemon juice or whatever suits their fancy. It could even be dessert with fruits and cream (whipped or clotted) atop. They are crispy and crunchy on the outside, with a soft-n-airy ‘doughy’ inside A lunch might even be Dutch Baby with Chicken a la king Dutch Baby’s are very versatile, easy, and extremly tasty. BTW...Make this and you’ll be using your Cast Iron Skillet a good deal more often :)

LOL Does she really have that much of a temper? Do remember she and her DH had a knock down/blow out in a restaurant several years ago. Chefs equal temper-mental persons?

I don’t think she has a temper. I was just surprised she was lurking on her own facebook page and popped out at several of us. Actually, her husband strangled her in a restaurant. She was the victim.
