Spaghetti & Tuna
An easy and economical mealtime treat is spaghetti and tuna with garlic and chopped Italian parsley.
Prepare regular size spaghetti or pappardelle per package instructions.
To a wok add a 5 oz. can of tuna, 1-2 cloves of minced garlic, 2-3 generous tablespoons of chopped Italian parsley.
Sauté tuna and other ingredients, adding olive oil as need, especially if tuna was packed in water.
Add drained and rinsed spaghetti and heat to serving temperature.
Season to suit with red pepper flakes and 1 teaspoon of capers.
Extra mileage may be gained by adding sliced black or purple “Bojita” olives, diced red onion and a sliced mushroom or two.
Serve with bread of choice.

Peruvian Layered Tuna & Mashed Potato Salad
“Causa Atun” or “Causa Limeña”
Causa (“cowsa”) is a versatile tuna & potato salad that may be served in various sized & styled containers. Causa’s versatility goes beyond tuna. It’s also prepared with other seafood such as shrimp, crab or octopus. It is also commonly prepared using a shredded chicken salad.
Prepare mashed potatoes using Yukon Gold potatoes. Fork peel and mash while hot or at least very warm. Instead of mashing, a finer textured product may be achieved by running the potatoes through a ricer once nor twice. Allow mashed potatoes to cool.
Season mashed potatoes to suit with 2-4 tablespoons yellow pepper paste - aji amarillo - and 1 tablespoon fresh lime juice.
Prepare a tuna or chicken salad using mayonnaise. In addition to your choice of seasonings, add a bit of yellow pepper paste - aji amarillo.
In a separate bowl, mash ripe avocados to a guacamole type texture. Season to suit with salt and lime juice. Avocadoes may also be sliced to suit, seasoned and used instead of mashed avocado during assembly. .
Causa may be assembled using a variety of containers:
Individual servings may be prepared by removing the ends of a large tuna can or using a 4” spring form pan.
Prepare larger servings by using a desired size baking pan, loaf pan or fluted mold pan.
If using a baking, loaf or fluted pan, assemble causa in reverse order to how it will appear when turned out. Line pan with plastic wrap to aid in removing.
Assembly: Evenly spread a base layer of mashed potatoes followed by a layer of mashed avocado then a layer of tuna salad. Top with a layer of mashed potato.
Thickness of layers is dependent on size of mold and amount of fillings prepared.
Garnish with sliced black or purple “Botija” olives. Additional garnish may include sliced sliced red bell pepper, boiled egg or sliced tomatoes.
Chill before serving.
I don’t mean to ruin an occasional potato mashed with butter, but just be aware that those potatoes we purchase from the store, that are not home grown, have an unbelievable amount of poisons sprayed on them. If you actually saw what they spray on them, you’d never eat another one.
signed, potato free since 2005. (Well, last month I did eat some french fries from Jack in the Box; they accidentally gave them to me and I didn’t discover it until a few stoplights away. I was weak. They were very very good, btw.)
best tuna ever
GENOVA Yellowfin Tuna in Olive Oil (5 oz., 8 pk.)
cheapest from Sam’s, a little higher at Walmart and groceies
I eat it plain out of the can, without draining the oil, and when I make tuna salad, add horseradish and shredded parmesan cheese, mmm
Just made tuna salad and used the potato ricer. OMG. It worked fantastic. This is the best tuna salad I’ve ever made. I can’t thank you enough. Great idea.
Happy to help! Works like a charm!
