“Ball brand lids are very expensive on Amazon.”

They are a buck apiece.

Weirdly, jars with lids are cheaper.

Thanks for posting. Here is the link to her blogspot.

http://everythingunderthesunblog.blogspot.com/

All sorts of info at the blog, including Booklets that you can print out.

She has the “Everything under the Sun Booklet”. It has a plan for a family of four, and mostly uses a solar oven. Includes recipes and amounts needed for a years supply.
However, it also includes a how to booklet on building a rocket stove. Also instructions for using a pressure canner.

“Everything made simple Booklet” is similar, but is more geared toward a rocket stove.

Either one of these booklets-if you don’t want to figure out your own plan, you could just do one of these plans.

She even has the cost figured (from that year-2010).

The Equivalency list of 2 pages is quite handy for planning purposes. It gives the amounts for various types of foods.
Here’s a few from the beginning of the list:

Applesauce (jars) ...................... 10 yrs 16 Tb / c 4 c / qt
Apple slices (dehydrated).......... 30 yrs 10 c / #10 can =1 1⁄4 lb 1 c dry + 1⁄2 c water = 2 c fresh
Baking powder ....................... 1 to 2 yrs 32 Tb = 1 lb Test: add 1 tsp to 1/3 c hot water. If it foams and
bubbles, it’s good. Exchange baking powder with 2 parts cream of tartar + 1 part baking soda.
Baking soda ............................. Indefinite 32 Tb=1lb Store in sealed container in cool dry place.
Test: add to water....if it bubbles, it’s good.
Beans (dry).................................. 30 yrs 12 c / #10 can 1 lb =2 1⁄2 c dry = 6 c cooked
Butter (almost)..........................1 lb shortening + 1⁄2 tsp salt + 1 2/3 c condensed milk. Whip the
shortening and salt until light. Add the condensed milk a little at a time and blend.
Butter (canned) ......................... 10+ yrs Purchase online. 12 oz can=24 Tb or 3 sticks of butter
Cake mixes.................................3-5 yrs Vacuum seal cake, cookie, cornbread, and other mixes
Candy.........................................Vacuum seal: chocolates 3 yrs / jelly beans, hard candies, etc 6+.
Canned foods.............................10 yrs “Canned food maintains its high eating quality for more than two
years and is safe to eat as long as the container is not damaged in any way.” (Canned Food Alliance) Toss
out any bulging, dented or weeping cans. When in doubt, throw it out.
Carrots (dehydrated) ................ 25 yrs 12 c / #10 can=2 1⁄2 lb 1⁄2 c dry=1 c hydrated carrots

This type of thing is almost ridiculous. I have about a year supply of food, we don’t need flashcards or any other complicated routine to keep it organized, rotate were necessary, etc. People make things too complicated, then they become unsustainable. Are they waste money on stupid things that they probably would need even if they were starving.

Apparently, you didn’t watch the video or visit the blogspot. And some people may not be as awesome as you.

The point was to make sure you stocked what you normally eat. And her method is extremely simple-it’s not complicated. And those flash cards = recipe cards. How awful — recipe cards so totally useless and unnecessary/s.

Water. Although we have a well, we are thinking about getting a cistern to use for our garden, and double as a back up water supply. We already have a Big Berkey filtration system.

I’ve also wanted an outdoor kitchen/canning area.

We bought a rocket stove a few years back that works with twigs or charcoal. And we used our iron skillet to make hamburger helper lasagne etc. We also have coleman camping stoves, and of course a BBQ grill.

I have a dutch oven/skillet combo that I can use for an oven for biscuits or rolls etc.

Marcella found a solar oven that I bought — I haven’t really used it much.

I do a lot of stuff - Pickling with vinegar, sun drying, dehydrating, fermenting, water bath canning, pressure canning, freezing, vacuum canning staples.

Just depends on what I have and what mood I’m in.

I LOVE the pressure canned meats - so tender even Hubby can eat them. And lots easier than canning veggies.

I’ve been wanting to made a rocket stove custom fit to the pressure canner. It’s hard to find images and articles these days but one type of rocket stove is designed so that the pot sets down inside it a little so that the heat scrapes up the sides. However, I have seen youtube videos of store bought rocket stoves with a flat cooking area being used for pressure canning. I might just copy one of those. I’m a fabricator so I build my own stuff like that. I built a smoker out of two full sized water heaters and a small under counter type for the fire box.

We lived off grid for 5 years and used a coleman camp stove a lot. It’s also what I use for canning. I take off the side shields, let the back lay back and put the canner on the opposite side of the gas connection. A 20lb cylinder will last a long time for general cooking and we have at least six of them. I need to start keeping them full.

The other thing I want to make is an outdoor, wood fired pizza/bread oven. We’ve got clay soil here and I can get some builder’s sand to add to it.

I’d have to find the website again but there’s a guy who went deep into designing and testing solar ovens and had complete plans. Might make one of those someday.

I’ve got one more water heater I want to make a rocket stove water heater from. Most of the year we do laundry outside with a wringer washer and having hot/warm water right there would be handy. I usually fill a few gallons from the kitchen tap.

I’ve got 12 acres of trees to clear so there’s no shortage of wood for fuel. Even if I run low here, there’s always logging being done and they leave the tops with diameters up to six inches.

Then of course there’s the passive solar house we have plans for one day. Wish I’d have started all this stuff 30 years earlier. Got some rain today so I should be good to dig holes for the high tunnel frame. Got arched pipe from a farmer who had his Quonset shaped, tarp roof hay barn blow down.

I think the rocket stove we got could be used with the canner. I have several-including the small All American that only holds 4 Qts. I find that managing the larger ones are getting very difficult for me as I get older.

It was also hard to get enough ripe tomatoes to do a whole batch with the large one. I like to make the stewed tomatoes with celery, onions, and peppers.

Yes, I wish we had started sooner too. I’d love to have an outdoor wood fired oven. We were going to make a rocket stove out of bricks, but at the time we could not find the ones we needed. I forget the terminology-fire bricks maybe-like we used to line the fireplace.

Hubby cleared twenty trees last year to build a shed/root cellar/storm shelter combo. We bought all the lumber at once in anticipation of the rise in prices. Good thing. The lumber is now 3 times what we paid - totally out of our ability to build it now.

So how do you sun dry tomatoes.

I can mine up as sauce, but there are always some stragglers on the vine that it’s not worth canning but I hate to throw them out.

Two required conditions:

1. Daytime temps over 85deg
2. Nighttime humidity under 60%.

Wash the toms, split them lengthwise, sprinkle a little kosher salt on the face. Or, dip them in lemon juice solution.

Sit them face up on a screen (air must get above and below) in the sun. Cheesecloth or net to keep out critters.

4-5 days.

Tons become ounces.

They keep for well over a year if properly dried. Keep them in a canning jar.

If you want, you can stack tight a bunch in a pint jar with evoo, garlic etc.

First rate eats.

Oh, and I dry my first pickings while it’s still hot and dry outside, can later when I’m overwhelmed.

Mine tend to ripen all at once, more or less.

They start out slow, then I’m inundated for a couple weeks, then is tapers off, but the stragglers are not usually the best quality by then.

I’ll have to give it a try.

I have noticed that some don’t, but Some of us do. And I wouldn’t characterize that video as a marketing video - more of a how to for those who might need some help. 😎
