I cooked fried chicken livers for the 2nd time in my life. First time in 40 years. Used an air fryer.
They turned out good. Tender but cooked all the way through. And it wasn’t as gross as I remember 40 years ago.
Tools:
pair of metal tongs,
a 10” bowl, and
2 large paper bowls.
Air fryer
Ingredients:
Container of chicken livers
Heavy whipping cream
1/2 cup of flower
Garlic/Pepper/Salt seasoning.
Salt.
Spray Olive Oil
Directions:
In a large bowl, I put about half a cup of flower, a tablespoon or two of corn starch, some Garlic/pepper/salt seasoning, a little more salt. Stirred that up.
I lined the bottom of the air fryer with aluminum foil and sprayed it with olive oil.
I drained as much of the juice off the chicken livers as I could and dumped them into one of the paper bowls.
I put heavy whipping cream in the second paper bowl.
Using tongs, I picked up a liver and coated it with cream then the flour coating and put it in the air fryer.
Keeping a little bit of space between each.
Cooked on steak (400 deg F) for 6 minutes. Flipped them over and cooked for another 6 minutes.
One container of chicken livers made two 7” round air fryer baskets of livers.
Using tongs and dipping in the cream base made it a lot less gross than my previous try.
This looks absolutely scrumptous. Why do so many dislike
broccoli? Remembering GHW Bush’s comment. At the time, thought it a bit ridiculous. Broccoli= a favorite in this
house.

choice? :-)
Can absolutely see this dish taking over the often requested,
“Green Bean/French’s Onion casserole. (Of course just joking
here) but as a replacement, much easier to swallow.
But my boss did ban me last week from saying “I’m craving fried chicken livers.” He told me to never say that again..
I had a craving for duck pate a while ago. Finally got to scratch that itch over Labor Day weekend.

This is interesting to me. My grandmother always baked her chicken pie in an aluminum pan, and when I’ve done it in pyrex or something like that, it hasn’t been the same. Stainless steel is almost as good, but aluminum is best.
I guess it has something to do with how the metal conducts heat.
I have a recipe for a Jiffy cornbread that includes creamed corn, sour cream, and jalapenos. It’s very good, and I’ll dig it up and post tomorrow.

Actually, I trust my air fryer to get them more done and consistent.
I was going to try sous vide, but someone said they tried it that way and they turned out a solid block. Apparently that style of cooking livers is good for making a pate, which I’m not interested in..
My husband loves chicken livers, and we recently bought an air fryer. I’ll show him this.
I’m not a liver fan; but I once had lunch at the National Gallery that included something called ‘Country Pate’, which was apparently made of chicken liver; and I did like that. I’ve been meaning to find a recipe and try making it.
I think I’d like anything with hominy.

But they really turned out good.
Broccoli is one of my favorite vegetables. I like that salad made with broccoli, bacon and raisins - I think the recipe I’ve used is like this, but I always cut the broccoli very small:

I think the aluminum makes a difference for the cornbread. It’s the only pan I’ve used for cornbread since I was given it. So many in my family turn their noses up at the old stuff, but I love it, and several pieces of Mom’s or Grandma’s have made their way to my home. Happy memories every time they’re used!

I found a few small cukes so I'm fermenting them now...
next job is to roast the red peppers, marinate them and can them....
