“Tried Ubuntu, which was going fine until it decided to disable all its networking functions, all of its own.”
Never heard of such a thing. I have several Ububtu servers running various things. One of them has been up for 4 months with no issues.
Methinks that your networking problem is elsewhere ... or you somehow managed to fat-finger your way into single-user mode.
Puppy & Slax have been around for quite awhile.
Likewise, I converted an Windows 8.1 pc to Mint21 with no problems at all. Loaded most apps from the internet with very good assistance from other users.
using rufus, a Windows USB burning program to put Linux/Ubuntu on the USB.
Works well, thank God: https://rufus.ie/en/
I think the best reviews on Linux distros is here: https://www.dedoimedo.com/computer_software.html I just tried MX Linux (tops now at https://distrowatch.com/) KDE (MX-21.2.1_KDE_x64.iso) using Rufus to create a bootable USB. I declined propriety multimedia coedcs in case they are not legal, and I do not need them, but I like the KDE DE the best.
Yeah it’s crazy. I tried 4 different Linux programs for that but non would do persistence even if they were supposed to. Finally had to use a Windows only program to make a Linux persistent USB.

But not surprising. Aside from LibreOffice and browsers as Firefox, I find Linux equivalents usually lacking as such to Windows with its greater easily available wealth of safe freeware. Even its default device manager is better than what I have seen in Linux distros.
But speaking of which, I enables hot plugging in my BIOS, and while Windows will recognize/show a drive when it is plugged in, it still shows a SSD even after I unplug it, even after refreshing (F5) the window. Here is a composite of images I sent to Windows feedback. One of these drives was then in another room!
MX 21. Debian base. THE best distro out there. You can save a snapshot of your distro with added apps and boot it with all your “stuff.” It is very nice.
