Oh no, that sounds awful. Hope you are feeling better soon. I have never had a kidney stone, or Tim, but then we don’t eat kale. 🤣
Seriously, a highly mineralized diet can cause them. And drinking distilled water can leech those minerals out. Trick is you do need minerals.
I would believe your BFF at this point.

Good that you are able to take the necessary time, and the change will be gradual. Then your mom can acclimate. She surely doesn’t need another shock.

“I have good soil in the barn I think, cows and horses spent many years in there pooping and much loose hay and feed has fallen in that soil... now I just have to use a wheelbarrow to get some of that rich dirt up to the back patio.

Not the kale, but spinach and beets that you need to watch out for! No soy and almond milk for you!

Watch a bunch of You Tube videos on growing potatoes; Mind your pot drainage. Give the above groung plant support. Keep the soil in your pots cool. Know whether your see potato is determinate or indeterminate. (Grows potatoes only on one level or will grow more tubers if you put more soil on it.) Good luck!

That is a good list! Probably the only thing I’d need to cut back on would be spinach, but I’m usually using it sparingly in salads, with scrambled eggs or in a veggie/meat wrap.

I can always substitute Kale for the Spinach, LOL!

It’s a shrub - you won’t find seeds for it. ;)

You could probably propagate a branch cutting if you were so inclined, though.

Kale, just remember to give it up for lent and have some fish!

Can Kale cause Hypothyroidism?

"Kale is considered a goitrogenic food, meaning that it contains substances (goitrogens) that may contribute to an enlarged thyroid. In fact, all cruciferous vegetables like kale are considered goitrogenic, including arugula, bok choy, broccoli, Brussels sprouts, cabbage, cauliflower, collard greens, mustard greens, turnips, and watercress."

“The thiocyanate content of kale has not been well-studied, and there are only sparse measurement data from limited reports,” Dr. Leung says. “As such, the exact amount of kale ingestion that may be associated with an adverse thyroid health risk is unknown. However, ingestion of kale—including raw kale—in usual amounts should be fine.”

In some reports, juicing kale is said to be the culprit.

“Although it has not been specifically studied, juicing kale concentrates the vegetable and thus potentially poses a greater risk toward iodine deficiency and hypothyroidism if ingested in large amounts on a very frequent basis,” Dr. Leung says. “These risks may be exacerbated in individuals who are already iodine-deficient, and these may include those with restricted diets, such as vegetarians and vegans.”

Does not sound like a big deal unless you happen to be mainlining it!

Thanks! I’ve been doing a lot of reading these past few days and changing up a few things in my diet. We eat pretty clean, but more water, for starters, for sure! :)

I've seen this garden layout before and have always loved everything about it. It would be pretty easy to duplicate (with some modifications) in the raised beds I already have.
