Greek Feta and Garlic Pepper Artichoke Spread

1) Place feta cheese, roasted garlic and 1/2 cup softened cream cheese in food processor container.
Cover and process until smooth.
2) Stir in the artichoke hearts, chopped red pepper and chopped fresh dill.
3) Spread feta mixture toast or favorite chip or cracker
4) Garnish with additional chopped red pepper.
Serves: Makes 35 canapés

The crock roast was deeeeeelightful, thanks. A patent may be in order! I wonder if someday they will computerise cooking? I mean like a program that doesen't rely on years of experimenting but KNOWS which spices harmonize and SING that song to the taste that we all appreciate when we experience it.

My whole life has been involved around inventing things, machinery, stuff for airplanes,I never stop, even when I sleep.It gets me in big trouble in the kitchen though because I am always thinking outside the box and sometimes it turns out to be ghastly stuff!
You are the greatest! Keep on haveing fun and loving those kids, all the rest can be gone like a cool breeze in an instant.

What a wonderful message to get on such a beautiful day as this.. You, my dear friend are one of the reasons that I love this place so much. You are so right that cooking can be like singing when it's done right, highs and lows.. LOL

KOSHER STYLE CHICKEN SOUP

I grew up on Chicago's near west side, in what was later referred to as a ghetto, with lots of old world Italians, and Jewish folks! The Butcher shops, were almost all Kosher, and the owners spoke Italian as much as we'd  kibitz in Yiddish.

This is a recipe that I make almost every other week and use the rich broth for a mess of stuff.  I don't keep a Kosher kitchen, but I still frequent the Kosher bakery, and meat market and freeze the bagels and chicken until I need them.

This is Mrs Levy's recipe our upstairs neighbor, given to my great aunt at least 50 years ago and has been passed around ever since..

  • 1 kosher chicken 3-4 lbs cut into eighths, you can find at a kosher butcher, or some major supermarkets have kosher packaged chickens, they are always plumper and fresher, but a lot more expensive.. :(
  • 3 med. carrots cut into thirds
  • 1 whole medium onion, cut into quarters
  • 1/2 cup dry white wine
  • 2 stalks celery (optional, l don't always use it)
  • 1/2 bunch fresh dill (do NOT use dried dill weed)
1) Clean chicken, put into a dutch oven, cover with water up to 1/8th from the top of the pot. Add carrots, onion, and celery.  High heat until water begins to boil, then lower flame to simmer. Cook uncovered for 2 or more hours, add wine and fresh washed dill (including the stalks, I tie the stems together, or wrap them in cheese cloth), continue cooking for 20 minutes.
Take out dill and throw away.  Enjoy!
My youngest son makes the matzo balls following the easy directions on the box of matzo meal and serve them in the soup.
I also cook fine noodles and serve it with the soup as well.  Heaven on earth!!!

I have a running joke here at work...nearby is a little hole-in-the-wall coffee shop that makes the absolute best latte -- the owner's specialty now bears my name. Although I am married (first hubby), I call the owner my 3rd husband. The second time I marry will be for money, the third for coffee. lol I'm considering adding a fourth, LOLOLOL

Seriously, thanks so much. You'll have mail soon, and I hope you had a wonderful Christmas. I did, and your cookbook certainly added to that.

I'm serious, though, when I say that I read that cookbook from cover to cover in a couple of hours. I'll be making the whiskey pork loin this week. yummmmm

I'm going to post a little something I'm writing in a minute or two...rip it to shreds if you like (I know you won't - ya'll are too nice), but it's an excerpt from a book of Christian devotions I'd started back in August. I've yet to title it, but am working on it. ;0) hope ya'll enjoy it.
