You're correct that they see truth as subject to change. This is because they believe that the earth and all life forms are in a continuous state of evolutionary change upwards. In some worldview discussions, this is termed the 'escalator effect."
Of course they immediately run into difficulties when asked, for instance, why mankind hasn't 'evolved' in any way since at least the advent of mankinds ability to depict human likenesses on various surfaces. We can see from the earliest depictions of man, and read from the earliest writtn descriptions that he hasn't changed one bit. Not only that, but if we're supposedly evolving in every way,which includes intellectually, then why are we still relying upon ancient 'thought'?
There is 'truth", but they don't have it.

No, the two evils are, either God's great gift of free will is violated, or the people die of starvation.
Through His words and actions, God has shown that free will is the greater good.
