Sean Hannity Thread Eats 8/4/08

Today I would like to share with you an original recipe that I use as an ingredient in many other dishes. August is the season for cheap ripe tomatoes.
You need 1 half sheet pan, 19 plum tomatoes, ½ cup of good but not great balsamic vinegar, good but not great olive oil, kosher salt and fresh, coarsely ground black pepper.
Cap, and split the tomatoes lengthwise before seeding. Rinse well and set aside to drain. Line the half sheet pan with parchment paper or a double layer of foil with the shiny side up. Put the balsamic vinegar in a bowl and slowly add olive oil while blending with a stick blender. A stick blender works best because of the high speed. You are looking for a medium to thick slurry.
Dredge the tomatoes in the emulsion and place cut side up on the sheet pan. Pour any remaining liquid into the tomatoes. Sprinkle with kosher salt and black pepper and place in a 200-210° oven for eight to ten hours. You are trying to dry them, not cook them. If you do this over night you will wake up to a kitchen filled with a beautiful aroma. Allow to cool and store tightly in a plastic container. Save ALL the olive oil/balsamic/tomato liquid.
They will keep for 2-3 months in the fridge and 2-3 years in the freezer. They never last that long.
Here are some I made recently. (Click on photos for larger versions.)

One of my original signature dishes is Pork Chops with Balsamic Tomatoes and fresh Basil. Cut a pocket in 1½ thick pork chops (make sure the fat side is AWAY from the pocket) and stuff with 2-3 slices of Balsamic Tomatoes and fresh Basil leaves. Rub the outside of the pork chops with the Olive Oil/Balsamic mixture from the tomatoes. Sprinkle with kosher salt and fresh coarsely ground black pepper and stand up on a parchment lined half sheet pan. Bake at 350° for 40 to 45 minutes. Serve with risotto and your favorite fresh vegetable.
Another original signature dish is to toss the tomatoes with a little butter, garlic, shrimp, and pine nuts before serving over angle hair pasta. Start the butter, garlic and a dash of cayenne in a cold pan and turn on high. When the garlic starts to sizzle, add the shrimps. When the shrimps start to turn pink, add the tomatoes, and pine nuts. You must keep it moving. You want to sear the shrimp and heat the tomatoes but not burn the butter. The moisture in the shrimps and tomatoes and the olive oil from the tomatoes will help prevent this. Serve over angel hair pasta with a final sprinkle of kosher salt and fresh black pepper. This works equally well with scallops but there are a few modifications to the technique.

I'm pretty sure that Sean and Beckel are friends. I know that Beckel and the Snowman were great friends.
I believe that Rush, Mary Matlin and Old Serpenthead are friends.
this also goes a long way to explaining the friendship between Kennedy, the U Boat commander, and Orrin Hatch.
Anyway, that's my two cents. I shall now sink back into my work-induced coma.
When I think about it, those Fox shows which I pretty much don't watch any longer, have a pretty goofy cast of characters: Morris, Beckel, Sharpton, that horrid Kirsten Powers, etc. The only guest I can think of who is a serious grownup and who I try never to miss is Ollie North.
