There are several significant points. One is the specific meaning of yod-tsadik-rosh having to with pottery, which I described up-thread. The word choice, to the original audience would imply a gradual process, not an instant one.
The second point is the double-yod. God gave this word a unique, variant spelling. He must have had a reason for doing that.
Jewish tradition is that it's because there are actually two creations in that word: creation of the good impulse and evil (or selfish) impulse. I'm strongly suggesting that the two creations are of the physical, by evolution, and the spiritual which did occur in that instant. Whatever the explanation, there is a significance in the double-yod. Which significance is lost in translations that don't indicate that by some means.
The significance, particularly given the root word used, is that it may be an indication that God used evolution.
It sounds like you’re straining to make a connection to evolution that isn’t justified by any possible reading but, if that’s what you want to think, so be it.
