I agree, a good hog should be smoked with oak, and for those dilettantes who don’t appreciate classic southern BBQ, then they can throw a few hickory logs on.
And sauce - well that’s your old family recipe, and if you don’t like my sauce, bring your gramma’s secret sauce.
