I once took a Greek bus tour from Salonika to Phillipi at the end of Lent and saw a number of skinned lambs hanging outside — for sale — at an isolated gas station. Country people there didn’t have close-by supermarkets.
Saw an interesting monument to Alexander the Great that day, too — a massive bronze sitting lion — in the middle of nowhere.
Well, I’m not averse to aging & hanging meat - we used to hang deer in the basement for a little to drain blood & such before it was skinned, but outside what stops maggot infestation on skinned meat?
